My son has such severe food allergies that peanut butter makes him sick just smelling it, and I found this out the hard way. Today I will share with you my chocolate dipped sunflower butter balls, simply divine and very comparable to a chocolate dipped peanut butter ball.
I have gotten very creative with all of our holiday cookies to make sure that he is included with all of the delicious treats. I have eliminated nuts from this recipe by using sunflower butter rather than peanut butter. LIVING WITH FOOD ALLERGIES
One of the most difficult things I have ever had to do as a MOM is making sure that any and everything my son consumes is safe. Food allergies are awful and terribly unfriendly food allergens are lurking in ingredient labels everywhere. Nuts, fish, honey are just a few of his arch enemies and he craves normal foods like his siblings eat. It is tireless and takes a lot of work. The end result of his food allergies can result in anaphylactic shock, so I am fastidious to this never-ending task.
So many people have so many different food allergies, and since they vary from person to person, please note this recipe is based on my son’s food allergies, so do tweak accordingly to yours.
Chocolate Dipped Sunflower Spread Butter Balls
Ingredients
2 Cups Sunflower Spread ( used non-crunchy)
3/4 C salted butter (make sure it is soft not melted)
1 Tsp Of Vanilla Extract
3 1/2 C – 3 3/4 C Powdered sugar
1 – package of Nestle Toll House Semi-Sweet Morsels (nut free check label)
Method
In a large bowl mix, vanilla, sunflower spread and butter. After this is all creamed well, and thoroughly blended, add in powdered sugar a little at a time, and when this forms a large ball, you have achieved the final moment of preparation.
Roll into one inch balls, placing on parchment paper. Then cover and refrigerate about one hour so they harden a bit. When you take them back out, melt your morsels per package directions in a small glass bowl and dunk each ball into the chocolate. Allow each to dry and then refrigerate to keep.
This is a simple, no-bake recipe and the results are perfect each time. We doubled our batch a few times and the results are magnificent! I am so happy I was able to do this for my son, good luck to all of you who have the same food allergies as it is truly hard to find an easy recipe that satisfies.
