There is nothing worse than biting into an unbaked potato if you want my personal opinion. Holidays, big parties, celebrations all are perfect venues to serve up baked potatoes, but you need to be able to cook fast for these occasions.
I have tested out baked potatoes in the pressure cooker over the holidays, trying them over and over again until I got it all right. I will tell you that you need to know what you are doing and not just plop potatoes into the pressure cooker and hope for the best. Plopping a potato into the pot will result in an explosion and mess.
The pressure cooker baked potatoes will be ready in under 22 minutes (not counting the pressure building time) and you will love the ease of prep for large crowds! Try my easy pressure cooker baked potatoes and lavishly live the baked potato bar out loud!
Easy Pressure Cooker Baked Potatoes
You can opt to use the oven or not this is truly your choice, I will tell you that I used the oven each time, but I could not have used it. The oven continues the cooking process and the 15 minutes or less that the potatoes are in the oven make them even softer than they will be after coming out of the pressure cooker. Do preheat your oven while the potatoes are in the pressure cooker and I advise wrapping each in a foil pack or all together in foil once they are done in the pressure cooker.
If you don’t put them in the oven, do release the pressure immediately, all the same, and pack the potatoes all in foil so they continue to stay warm and soft. To keep it really easy, I put them in foil pans and cover the pan while they are in the oven and then I toss out the foil pan. Remember each of these was coated in oil so I don’t want a mess in the oven.
Make sure to slit each and every potato, this is how you avoid those Instant Pot, and Pressure Cooker messes that you NEVER want to deal with.
I put at least 6 in the pressure cooker each time I did this recipe and they all cooked evenly.
Rubbing each potato with oil before cooking seems to be the magic ticket to success.
Ingredients
6 Potatoes (medium sized)
Oil (canola)
Salt (if you want it)
Foil
1 C Water
Foil (optional)
Foil Baking Pans (optional)
METHOD
Scrub all potatoes and make an “X” in each
Place rack in the bottom of pressure cooker
Take each scrubbed potato and roll in the oil and then lightly sprinkle with sea salt
Place each potato on rack.
Add water to bottom of pressure cooker
Place lid on pressure cooker
Set Instant Pot Manual to High Pressure for 22 minutes and immediately release pressure when done.
OPTIONAL Step.
Preheated oven to 400° -done while pressure cooking potatoes
Remove potatoes from the pressure cooker, place in either a foil pan and cover with foil then bake for about 20 minutes or place potatoes each in a piece of foil and bake additional 20 minutes. I did this to allow the potatoes to cook to an even softer potato, but it is NOT a mandatory, they are really perfect right after pressure cooking. I, however, have cooked in the pressure cooker only and have been quite satisfied. Truly your own personal preference.
