There is simply no time to have long drawn out cookie processes. I am all for getting it done fast, easy and making sure the cookies taste delicious. For years we have used this easy Thumbprint cookies recipe in my home and now I would love to share it with you.
Imagine a cookie that you get to put your fingers on before someone else eats it, that’s right a Thumbprint cookie. The one time it is legal to smash a food and serve it, lol!
Don’t worry about running to the grocery store for funky ingredients because they are not in my recipe. I keep this plain, simple and delicious. As a mom of a child with severe food allergies, I have made these nut free, and he can eat them. You will need a few staples like butter, and flour and about 1 hour of time. Get ready to lavishly live easy thumbprint cookies out loud.
Gather The Ingredients for Easy Thumbprint Cookies
Ingredients
3 Sticks Butter softened (1 1/2 C)
3 1/2 C Flour
1 Tsp Baking Powder
1 1/3 C Sugar
2 Tsp Vanilla
2 Large Eggs
1/2 C Jam (you pick the flavors)
Mix Wet Ingredients first. Add in dry ingredients.
Preheat oven to °350 degrees Fahrenheit
Roll dough into 1″ Balls
Line Parchment paper on baking trays.
Drop each ball onto parchment and depress thumb into each creating a nice well
Add about 1/4 to a 1/2 Tsp of Jam to each
Bake 6 minutes until golden brown.
Allow cooling then remove to cooling rack and spritz with powdered sugar.
Store in an airtight container for up to one week or refrigerate.
