Packing school lunches can be part of the daily grind, but it should not be treated as such. I realized early on that my kids depend on my lunch to fuel their little bellies for their busy days and that I needed to make each and every lunch special. I once worked for a woman named Priscilla who told me a story that has stayed with me each day that I pack a lunch, make a sandwich or add a little extra love to that lunch sack. Priscilla had 3 daughters and as it happens, each grew up and the days passed very quickly. Before Priscilla realized it, her last daughter was in her final year of high school and soon she would not need her mom’s packed lunch. One morning Priscilla and her husband were having coffee and she said, “oh I have to pack that peanut butter and jelly sandwich again, I just wish…” her husband interrupted her and said,”in less than a year, you will never pack that peanut butter and jelly sandwich again, you will crave the mornings that your hands smell like peanut butter and that jelly stays stuck to your fingers long after they get on the bus, don’t complete that sentence.” It is in her husband’s words that I find myself entranced and devoted to packing a lunch with a smile and tons of love everyday. Time passes quickly, kids grow up and you never get to hit the repeat button on life.

How to pack a lunchbox for kids is what is on my mind lately, as we are headed to the last few months of school, I want to make sure that my lunchbox skills are as good now as they were at the beginning of the year!
