As a die hard fan of meatless meals, I am constantly striving to expand the pasta dishes that I create. Variations of recipes and creative new spins on traditional pasta dishes provide the ability to create gourmet mixtures that create fresh new flavors.
The recipe I will share with you today is a time-honored family recipe that I tweaked a bit to create a tad more texture and of course, my Sicilian grandmother would definitely approve. Enjoy a rich flavored pasta dish with minimal ingredients and labor. Lavishly live pasta out loud and try out my Pasta Aglio e Olio Feta and Spinach.
Pasta Aglio e Olio Feta and Spinach
The pasta in this recipe cradles the ingredients and transforms everyday basic ingredients into an assault of both richness and flavor without being overbearing.
12 Ounces of Pasta(you choose cut)
5 Tbsp of Extra Virgin Olive Oil
4 Garlic Cloves, Minced or Crushed
1 Bag of Baby Spinach (6 or 8 oz)
1/4 Cup of Parmesan Cheese
1/2 Cup of Feta Cheese
2 Tsp of Sea Salt
1/4 Cup of Panko Breadcrumbs
In a skillet, heat 2 TBSP of Olive oil, Add Garlic, lightly and quickly brown. Add breadcrumbs and brown- Remove from skillet
In same pan/skillet, 3 tbsp of Olive oil, and Spinach and Salt. Add Spinach to pot, cook on low, and just allow the Spinach to wilt.
Combine Spinach, breadcrumb and Garlic mixture to Pasta, add Parmesan and Feta. Serve.
TIPS & TRICKS for Pasta Aglio e Olio Feta and Spinach
Al Dente pasta provides a better texture against the palate.
Boil pasta and immediately add the spinach combination.
Once you drain the pasta, rinse with cool water quickly and then lightly run some vegetable oil through the pasta to keep it from sticking.
