Tortellini Caprese Salad
We all have our favorite tortellini, whether you purchase the dry and shelved tortellini or the refrigerated, however, I will suggest for this salad to purchase refrigerated tortellini as it makes quite a difference not only in cook time but in prep time as well.
You can buy meat tortellini or cheese depending on the crowd you are having and if you are a meat person or not! This recipe is so adjustable and it serves well as a side or a main entree.
Prepare your water ahead of time and do not overfill your pot. I also suggest putting a bit of oil in the water that is boiling to keep things from sticking together. Make sure to place your strainer in the sink.
Tortellini Caprese Salad Recipe
INGREDIENTS
1 C of Washed, and Dried Grape Tomatoes or Cherry Tomatoes (your preference)
1 C of Fresh Mozzarella balls drained from their oil salad (if you purchased in a tub)
1/2 C of Feta Cheese crumbled
1/2 C Balsamic Oil & Vinegar Dressing (store bought or homemade)
2 – 18 oz packages of Five Cheese Tortellini, boiled, rinsed
METHOD
Prepare a large mixing bowl with the following items: Tomatoes, cheese, and mix.
Add in Tortellini.
Add in Balsamic dressing little by little and mix as you go.
Serve or Chill.

Make this ahead of time and refrigerate it, or serve it just as you make it. The recipe can be increased for larger parties and yet the flavor is always delicious. I love using whole little tomatoes because there are always those that ‘would have tried it if there were not tomatoes in there’ but now they have no excuses, lol!
