Food is glorious and the summer is the best time of the year for grilling. My family loves when I change up the basic burger and turn in the Angus Ground Beef for Turkey. Change is good and I love mixing up big batches of my turkey burgers with Rapini and Feta. It seems as quickly as I make them, they disappear. This mixture of turkey and vegetable and cheese is about balance, fresh taste and offering a fresh spin on basic flavors. The Backstory
Allergies to food preferences in my home keep me popping out new recipes, adding twists to traditional recipes and adding in the unordinary to create extraordinary eats. My daughter has been on a no-red-meat movement over the last 2 months at home and as I try to please her, I try to please myself with cool recipes that utilize my favorite ingredients.
My affection or my addiction for Rapini runs strong. I cook a few heads a week, I love the bitter taste and I can’t imagine not having Rapini (A.K.A Broccoli Rabe) in my daily eats. The decision to incorporate Rapini into the turkey burger was to marry a bitter flavor (the Rapini) to a very bland, sweet meat, changing up the normal presentation. I took this one step further and added in Feta Cheese and this truly made the flavor full and balance, without any trace of bland!

Turkey Burgers With Rapini And Feta
INGREDIENTS
1# Of Ground Turkey
1 Large Mixing Bowl
2/3 C of Feta (not in water)
1 C + 1/2 c additional as needed Panko Bread Crumbs
1/2 C Chopped & Steamed Rapini ( 4 Tbsp of Water, 1 Tsp of Olive Oil and Sprinkle with Salt)
METHOD
RAPINI Preparation
Clean Rapini (follow my How To Clean Rapini)
Chop Rapini into smaller pieces (1 C Uncooked)
Place Rapini in 4 Tbsp of Water, 1 Tsp of Olive Oil and Sprinkle with Salt
Place Mixture of Rapini into Microwave and Steam down for 3 1/2 Minutes.
Remove from microwave, place into a colander, drain by pressing with a spoon against the rapini.
Chop rapini into smaller pieces because you are going to mix this into the turkey mixture.
TURKEY MIXTURE
Use large mixing bowl and place turkey, Panko (1 C), and feta.
Squeeze together mixing with your hands.
Now add in the Rapini. If mixture is not able to be formed into patties, add additional 1/2 C of Panko
Once the mixture has all ingredients, begin to form into patties.
GRILL
Cook burgers on side 1 for 5 minutes and then turn and cook for an additional 3.
Remove from Grill and serve, refrigerating any leftovers.

This recipe is so easy to make, and it yields wonderful results. Do not let the burgers overcook or they will dry. Do make sure to cook that rapini before you put it in the burger or it will not be enjoyable. Lavishly live food out loud and dig into this wonderful Turkey Burger with Rapini & Feta.
