Even though rain is looming over head, my thoughts today are towards summer, grilling and outside dining time, al fresco as so many call it. One of my favorite foods is a super low carbohydrate and it is a very healthy fat. I love the nights with pit fires, smoldering hot grill fire and the smell of flame-broiled anything. It is often the fresh veggies that make my taste buds dance with excitement as Avocado season is upon us. Avocados are lean, mean and green and ready to be your new favorite fruit, but be ready to be surprised at how versatile and avocado can be. Did you know that avocados are fruits? They are pear shaped fruits, offery a hard, leather-like outside texture. As the texture gets more ‘black’ the fruit is more ripe.Let’s lavishly live food out loud and discuss Avocados and summer time!
As you know I am all about the LCHF diet. Avocados are something I dine on daily as I crave their taste and they mix wonderfully with all the seafood that I consume.
Avocados can be grilled and they are really delicious with apple-wood smoked mesquite. Peel your avocado, and cut into slicing leaving the big seed cut out. Brush each avocado slice with olive oil, and sea salt, grill on each side over medium heat for 1 minute, careful not to char. Remove from grill and serve with fresh salsa. These pieces are also great alongside white fish with a glass of chardonnay. It’s not about cooking it through, as these are best served raw, it’s about the flavor of the mesquite against the flesh of the avocado. The taste will dance against your taste buds and that glass of white wine will only enhance it!
A breakfast sandwich has never tasted so good. Cook up a sausage patty, egg, and add a little hot sauce. Top off with a fresh ciabatta roll, and fresh avocado slices. Hello morning. Serve with a vodka and oj which will compliment the sandwich! YUM!
At lunch, I stack the avocados into my salmon, tuna, or whatever salad I am eating and sometimes I just slice them straight up and add a dash of pepper.
Grab that Margarita and get ready to slush it intensely while snacking on Guac. That’s right Guacamole is made from Avocados. Find a ripe avocado, I peel and the avocado, and get the pit out. I mash mine with a fork and in a food processor I take a roma tomato and chop it. I don’t like cilantro so I use celery leaves, chopped fine, garlic(cloves of it, but I am a garlic girl), a tbsp of red onion, a few jalapenos for flavor, Mediterranean salt, lime juice and whip it altogether and I have my own little bowl of heaven. Add pita chips or nacho chips and you have a full party in your mouth.
