Cooking is a passion and I love when my family enjoys their meals. I do not like waste so when I see a BBQ sauce, in the fridge on it’s end I know it is time for me to whip up this easy to prepare recipe. Grab an onion, bbq sauce, pork strips and pepper, and you are set to go.
The pork strips in this menu can be served on rice, with pasta or potatoes or even on a bun, and because they are slow cooked, the meat will be fork tender. This is perfect served up in large portions at family gatherings, or even placed in a crock pot. One thing is certain, make enough because it will get scooped up before you can blink your eyes!
You will need to chop your onion into little pieces and let it sweat in 1 tsp of Olive oil on the stove. Once it is translucent, add the pork strips that you cut and a bit of pepper to season. I do not add salt as I feel the bbq adds enough salt and I don’t believe in over doing it.
The meat will need to cook on low for a few hours and when it is done it will be fork tender. If you like you can add toppings like melted cheese or jalapeno peppers. You can get fun with it and serve these in taco shells, on nacho chips all dressed up with ranch, etc., or you can add them to tortillas, wrap them up and add taco sauce to the top.
If you prepare enough meat and have leftovers, this meal freezes well and will be a great quick break for you if you pop a batch into a freezer bag and pull it out on one of those nights where you don’t have any more time! Quick, easy, great tasting meals, that use up ingredients you have in your home and don’t cost too much to prepare, that is what this meal is made of.
