Sorry for the redundancy in the title, but there are no other ways to describe what I am about reveal to you. Truly the best tasting cake batter popcorn in the form of a popcorn cake, are you ready? I have made so many different popcorn cakes over the years, but this one is perfected.
Batch after batch, attempt after attempt, I practiced with birthday cake batter flavor. There’s nothing like a great tasting cake and when I can add popcorn into a recipe well, it’s even better. No matter what age I am, popcorn is a passion and I thought by now I might have consumed the world’s supply but not so!
Today I will share my birthday cake batter popcorn cake, because it is easy to make, tastes great and is perfect for any time of the year. Let’s get poplin’ shall we? Lavishly live popcorn and cake batter out loud! What I am about to share is a very sophisticated looking dessert with a sweet little price tag!
What’s not to love about birthdays? After all, we party, we celebrate and we eat cake! In my case, I eat popcorn cake because it is lighter and more satisfying than cake! I make this cake year round because my family loves it. It’s nut free, and the ingredients can be manipulated to pretty much fit most food lifestyles.
Birthday Cake Batter Popcorn Cake Is No Bake Fabulous!

Here Are A Few Tips
Always have your ingredients ready before you start. Melting marshmallows is not a long process, do make sure to follow my steps to make the melted products ‘slide’ right out of the pan. Years of experience shared.
There’s no baking involved with this cake, it’s as simple as pop, coat, go! This recipe is the kind everyone needs to keep in their armories of fast yet delish recipes! You can even use microwave popcorn.
Perhaps my favorite part of cake batter popcorn cake is that you can choose any variety of boxed cake mix and match it’s taste with icing and colorful sprinkles.
The taste of cake batter popcorn cake is best with a ‘Funfetti’ type cake mix, or a white cake, as it truly flirts with the flavor of real birthday cake!
Never turn the heat up to high when creating the marshmallow melt because they will scorch, burn and kill your cooking pot. Let’s just say trial and error taught me this along the many years of making these.
Always nonstick spray your bundt pan or you will be digging and chipping at a dish to play RELEASE The Cake.
Definitely allow this to settle into the cake pan BEFORE attempting to remove if you want it to look like a cake.
6 C + 1 C popcorn (popped, and less the stray kernels)
1 1/4 C Funfetti Cake Mix (just as is)
A Pound of Marshmallows, ( I use mini, they are faster to melt and smooth)
1/4 C Butter & 3 Tbsp Coconut Oil
1/2 C + 2 Tablespoons White Chocolate Chips
Chocolate Chips (1/2 C) for drizzle only
12 Mini Gummy Bears
Bundt Pan & Nonstick Spray
Large Pot for smoothing Marshmallow Mixture
Large Mixing Bowl Preparation
Prepare the 6 cups of popcorn and then place in large bowl. I sift this and shake to to the bottom of bowl and then throw out ALL unpopped kernels. Next, add in the 12 mini gummy bears as well as 2 Tablespoons (about 12) of white chocolate chips. Set aside.
Place large pot on stove. Set heat to medium, add in butter first, and allow it to begin melting. Then add in the marshmallows and stir well to coat. Next, drizzle with coconut oil and stir again.
Do not stop stirring as the marshmallows will melt fast. Whip till smooth. Once smooth, remove from heat, and stir in the cake batter. Mix well to no lumps. Trust me when I say this step is easy. I believe the thing that is the hardest is holding back and not sampling.
If you want a taste of heaven now is when to try it out! Really, the wafting scent of baking cake will be right, smack dab in front of your face. Can you resist? I never do!
Bowl To Bundt Pan
Spray Bundt Pan with nonstick spray. Combine the marshmallow and cake batter mixture with the popcorn, gummy bear, chip batter and mix very well. If you have marshmallow mixture that make the 6 cups of popcorn too gooey, add in the additional cup of popcorn that was held in reserve. (if this is not the case, enjoy the extra cup of popcorn, lol!)
Once mixed, it’s time to add it to the bundt pan and press it in there tight. You want to form the shape of the bundt, and the marshmallow needs to be compacted. Do not however ‘crush’ the popcorn, just press spatula against popcorn mixture and press into the pan.
Cover with foil and then refrigerate to cool. The cooling process is imperative to get it to set, but it is also very fast. (I have been known to place mine outside on the patio, let’s be serious it’s cooler out there than in the refrigerator during the winter months anyway.
The cooling process is about an hour. Just enough time to clean up the mess, kick back and wait for the next small step. Once cooled, transfer from bundt pan to a serving platter.
Chip Chip Hooray!
Melt the 1/2 C of White chips ( it’s about 45 seconds in my microwave but all microwaves differ). Once it is heated, stir to make sure all is melted and ready to drizzle across the popcorn cake. When I eye the cake up, it simply looks too drab to be a birthday cake, so, I add chocolate drizzle to pep it up!
Chocolate For The Win!
Use the 1/2 C chocolate chips, melt them in microwave the same way you did for the white chips. I want a really great looking cake. White is nice but the swirled white and chocolate look better, making it more eye-appealing.
Drizzle over the popcorn cake and allow to set. I have found this takes about 1/2 hour. However, you can serve it with ‘wet’ icing, I just prefer when it dries better. Truly this is all preference.
No refrigeration necessary. Just serve and keep any left on a tray covered. Good luck with any leftovers, very doubtful there will be some!
