Chipotle Garlic And Lime Roasted Potato Medley
All of my recipes are always easy to recreate and do not take a long time to make. The recipe is about eating different foods with nice flavor. Potatoes are versatile foods and can be cut, chopped, grilled, boiled, microwaved, steams, pressure cooked, mashed etc.
Using what I know, I took the old recipe we had and freshened it up. My thoughts were, “this cannot be as good as it gets!” I was so right. The potatoes tune-up turned out fab so I have been making them ever since. Now it’s your turn to try.
INGREDIENTS
You can change the potatoes you are using, and use any brand of peppers. In fact, the recipe is so easy to recreate I am sure you can feed back to me without stir in options and changes. I am alway looking for more ways to create and change the recipe.
Here’s your ingredient list
A Large Baking Potato, peeled and cubed
Large Sweet Potato, Peeled and cubed (1)
One Tsp of Mediterranean Sea Salt
Lime (will be zested and squeezed for fresh juice)
1 – 7 oz Can of Chipotle Peppers in Adobo (whatever brand you can find)
From Can: 3 Tbsp Of Adobo Chipotle Sauce & 2-3 Chipotle Pepper in Adobo
Large Garlic Cloves (3), peeled and chopped
3 Tbsp Of Olive Oil
1 Baking Dish
PREPARATION
Do take care to follow my tips below. The ideas that I share with you will help you to perfect the cooking of the potato medley. In the end the results you yield are only as good as the cubes you cut.
Peel both potatoes. Rinse those potatoes too. Pat dry with a paper towel for easier handling whenever you go to cut these. I prefer to purchase potatoes that are larger, this way I need fewer and I have to peel less.
Also, try to keep the slices uniform so that everything cooks evenly. I find that the most common mistake with this recipe is rushing through the prep. Just take your time and all the potatoes will cook evenly if the pieces are uniform. There’s nothing crappier than biting into a raw potato cube, that’s just a mouthful of starch!
Slice Potatoes into thin Rounds
Chop White Potato Rounds into mini pieces. See I have but them fairly uniform in size. As I stated above it is really important for the cooking time. If you cut each potato rather different then you end up with some cubes that need to be cooked far more than others.
Why Piece Size Matters
You do not want to have smaller pieces burned while other pieces are less cooked, that is just not how this recipe works. Just take your time and get this part right,it might take you a few minutes but it is so worth it. These are little nuggets of heaven when they are done.
Chop Sweet Potato into mini pieces.
Mix In Bowl
Add Salt & Olive Oil
Peel and Chop Garlic. Note that I did not cut that garlic into mini pieces, rather morsels that will be dined on. A well-cooked piece of garlic is delicious and through this recipe, it enhances the flavor of the peppers. Truly amazing when it is finalized.
I suggest larger cloves of garlic so that they are easier to slice and you can either randomly chop or cut into thin slices, totally preference. Don’t’ forget to pick up a pack of gum lol for garlic breath!
Add to mixture, stir.
In serving dish, place mixture
Bake 400° for 45 minutes until potatoes are thoroughly cooked. (foil covered)
Remove from oven and place cooked potatoes into the bowl.
Place Chipotle Pepper from the can (cut into smaller pieces)
Add 2 Tablespoons of Adobo Sauce
Zest lime.
Squeeze fresh lime juice and toss onto potatoes.
Toss together and serve.
