No Skimping on Yum! Instant Pot Holiday Mashed Potatoes
I did not cut any corners on taste, or ingredients that might be needed to make these taste amazing!
But I did cut out boiling, and draining, and all that fabulous mess! Drink an extra glass of wine and don’t worry about it, the recipe almost could cook itself, LOL!
You’ll still be using butter, but you could also sub in Olive oil if you prefer a more ‘Italian’ spin on the potatoes.
Also, if you want the potatoes to taste smoked toss in some smoked paprika for fabulous RED and smoky flavor!

The holidays from November through December truly celebrate and invite the festive reds and greens on every level you can imagine.
Green trees, red berries, green ivy, garland, and that’s the shortlist.
While traditional Christmases are often made up of traditional foods, there’s no rule that you have to keep those same recipes going.
Yes, traditional recipes are always a necessity, but you can add in some new recipes and see what feedback you get.
That’s actually how I stumbled upon Christmas green and red mashed potatoes with garlic.
Christmas Green and Red Mashed Potatoes And A Change-Up
Years ago, I received an Instant Pot. Actually, long before they were so trendy.
So what happened next seems to be the norm, I cooked any and every recipe in the Instant Pot to see how much easier my life could be.
Added ingredients changed the taste (Naturally) and everything that took less fuss, actually tasted even better!
Well, the rest was history as One-Pot cooking was made possible by the Instant Pot.
If you don’t have an Instant Pot all I can say is get one, they are one of the most used appliances in my kitchen.
Instant Pot Holiday Mashed Potatoes Were Born Unto my Kitchen
There are a lot of different-sized Instant Pots available, in fact, one for any size family. Buy the size that seems right for you.
Don’t purchase an oversized Instant Pot for the holidays, let your everyday cooking and standard family size guide your purchase.
Holiday Green and Red Mashed Potatoes
The easiest holiday side dish made with the Instant Pot. Colorful, tasty, and meatless!
Ingredients
- 3 1/2 Pounds of Red potatoes skin on, scrubbed, potatoes with any blemishes cut out, cubed into smaller pieces.
- 6 large garlic cloves peeled, then smashed (or minced)
- 3/4 c. vegetable broth you can use chicken if you prefer Lower sodium is best Divide this into 1/4 C + 1/2 C as you will use this separately.
- A Pinch of both Himalayan Salt or sea salt and Freshly ground pepper.
- ¼ c. heavy cream not light
- 1/2 Stick of unsalted butter cut into even chunks
- 1/2 C Parsley or Chives rinsed dry from rinsing and chopped, set aside
- Smoked Paprika set aside or Plain Paprika
Instructions
- Prepare your Instant Pot.
Place liner in the pot.
Plugin.
Start in saute mode.
Add in 1/4 c of the broth (reserve the other 1/2 for right before we cook)
Next, add in the garlic and the potatoes as well as the salt and pepper.
Allow this to begin to saute.
Stir to combine and ensure that the salt and pepper meets all the potatoes.
After 15 minutes, you might see that the liquid has evaporated a bit, and that is ok.
At this point, turn the pot off.
Introduce the other 1/2 c of the broth.
Place lid atop, and make sure the VENT Is SEALED.
Set the Manual setting to 8 Minutes.
The pot should come to temperature and pressure should build very quickly as you were sauteing ahead of this.
When the cooking time is complete, just allow the pressure to release naturally for 15 minutes, then you can manually release the remaining pressure. (do beware of 'spitting' from the vent as well as HOT steam)
Now it is time to carefully remove the lid.
Set this aside.
Then add heavy cream and butter.
Using a potato masher, or an immersion blender, mash the potatoes until they are almost smooth.
However, you still do want to let a few chunks show through.
You can taste and season with additional salt and black pepper if desired.( I don't but you can if you like)
Now, carefully transfer the HOT mashed potatoes to a serving bowl.
Top off with GREEN parsley or chives (whichever you have chopped).
Add a generous dash of paprika across the top.
Serve immediately.

A Few Quick Tips Before I Go
Use a larger clove of garlic and split it in half.
Don’t use minced garlic the recipe won’t taste as good.
Do scrub the red potatoes and make certain that after the potatoes are cooked you leave some with chunks in them.
If you prefer no chunks you will need to use a hand mixer to whip smooth and you might need to add a bit more liquid to keep these moist and not dry.
Store any leftovers in the refrigerator.
Fresh parsley is tasty atop but if you prefer cilantro you could use that as well.
The Instant Pot will have to come to temperature, and I have allowed for that in the directions, but do keep that in your planning time.
