As a Mom of three very busy children, time is never my friend, but staying ahead of the schedule is what I attempt to do on a daily basis. ¬†When I think about my week, as I am grocery shopping(or before) I have a nice repertoire of recipes that I can turn to when the week is about to get whacky and I need to get a little bit more organized! It’s the point in the season where all we moms do is run kids from sport to sport so how we work out our feeding camp is highly indicative as to if we will survive the running or not! ¬†Want to keep your meals from getting short-changed? Here is an easy to make BBQ Meatball that ALDI helps me create letting me lavishly live food out loud and those crazy weeknights that dare me to survive.
This meal will literally take you 15 minutes from start to finish if you pay attention! When in ALDI freezer section, grab their basic frozen meatballs, these are so versatile, and they have a ‘light’ version as well. ¬†The Burman’s BBQ is dandy(so grab that) and don’t forget the frozen peas and the bag of wavy egg noodles.
BBQ Meatballs with Fluffy Egg Noodles and Green Peas
2 bags of Aldi’s Meatballs ($2.09 each)
1/4 C BBQ Sauce
5 Tbsp Water
In as Skillet, add Pam, water and Meatballs, and drizzle bbq over meatballs, cook on Medium heat for 15 minutes(until cooked) – Water will evaporate and bbq clings to the meatballs
While the meatballs are cooking, add water to a pot, bring to a boil and add 2 bags of Egg Noodles.¬†While the water is cooking the pasta, for the last 5 minutes dump your peas into the pasta water, it is all going to mix up anyway! ¬†Drain the pasta and peas, scoop onto plates and tray up the meatballs, … Dinner is served!
The whole meal will cost you under $9 and will easily feed 5. We have used this recipe over and over and all of my kids eat this meal.  This meal allows me to lavishly live food out loud!
