- Green Spanish olives – these are the iris and pupil portion of the DIY edible eyes for Halloween
- Basil leaves – are the cradles where each of the sclera (fresh mozzarella slices)
How to assemble Halloween Fresh Mozzarella Eyeball Appetizers
Here is how to put your eyeballs together, it’s fast and easy and I absolutely advise sampling along the way because there is nothing like a fresh mozzarella ball, from pearl-sized to bocconcini, they are awesome!
Step 1: Basil Leaf Prep
First, rinse the basil leaves that you anticipate using (rinse more than you need in case of rips!), these are the orbit, and the other ingredients all rest atop the fresh basil.
Second, pat each leaf of basil dry and then place the leaf upside down which means the normal underside of the leave will be face up to form a ‘cradle-like’ orbit (socket) for the eye, placing the basil leaves side by side to make a set of eyeballs.
Step 2: Prepping The Edible Halloween Eye Portions With Fresh Mozzarella
Rinse out the colander from washing the basil and then place a few of the fresh mozzarella in it to briefly drain, do not rinse.
Next, place the balls of fresh Moz on a cutting board, and slice them into a few pieces (2-3) (depending on the size you chose to work with this step might not be needed – see notes in the recipe card below)
Again, this is the white eyeball area that you working with right now and it should have some depth to it to look realistic.

Step 3: Prep The Olives For the Iris and Pupil Of The Edible Eyeballs
Drain your olives but do not rinse them.
Pat the olive dry a bit,
Slice each olive in half.
Step 4: Assemble The Fresh Mozzarella Eyes and Eyeballs
The basil leaf is already upside down and ready to cradle a sliced piece of fresh mozzarella to create the white of the Halloween eye, so place one freshly sliced mozzarella piece on each of the basil leaves, making sure to place the cheese towards what would be the inner corner of the eye to make it as realistic as possible.

If you have to adjust the eye portion (iris and pupil olive) you can slice it thinner on the bottom portion, or you can cut a divot into the cheese to set it into it more, you can see I did that on one of the photos.

What Can I Substitute In The Recipe?
- I used small ‘egg-sized’ balls of fresh mozzarella referred to as Bocconcini but you can use also use Ciliegene mozzarella balls these are the size of cherry tomatoes and would not require slicing
- instead of Spanish Manzanilla olives, you could use a simple black olive sliced or a tiny speck of red pepper, etc.
- you can use hard crusty pieces of bread instead of basil
- use buttercrunch lettuce instead of basil but you will need to trim it to a relevant size

- Basil does not cooperate with being refrigerated it will wilt and shrivel or worse yet it will turn black!

- 2 Fresh Mozzarella Boccincini Balls (each the sizes of an small egg) Drained
- 6 Pieces of Basil, rinsed and dried with a paper towel

Notes
You can use pearl size fresh mozzarella,Ciliegine (cherry size), or Bocconcini (I used this size)
Using smaller fresh mozzarella does not require slicing as it is small enough, however, if you do use the smaller sizes you may want to slice the bottom so that it will sit straight
