Holiday Hangover Soup
Ingredients
- 1 C of chopped celery
- 1 c of Peas
- 1 C of Cut Up Carrots
- 2 C of Potatoes peeled, cubed
- 1/2 Yellow Onion Sliced
- 1/4 Tomato Sauce
- 1 C of Barley
- 2 vegetable broth cubes
- 4 C of water
- 2 Tbsp of Worcestershire Sauce
Instructions
- In a large pot, add all listed veggies together.
- Add all the water
- Add Tomato Sauce
- Add Barley
- Add Veggie Broth Cubes
- Add Worcestershire Sauce
- Mix & Cook for 3 hours
- Serve Warm with crackers
What you will find in this recipe are the most common vegetables you keep on hand, but often keep too much of from potatoes, to fresh carrots. Don’t let the vegetables go to waste, use them in soup. The barley introduces a bit more heartiness to the soup. Barley offers fiber to the diet and after many days of partying and holiday foods it is good to gently re-introduce fiber back into your diet!
