Once, long ago, I stayed on a large, beautiful Italian island where eye candy was as yummy as the food. Sardinia has over 2000 KM of lovely beaches and coastline. After spending a summer in Sardinia my culinary style kicked up a bit. Zucchini has flare and this recipe lights it up!
While I might have been there to learn the language and the culture, I spent a good bit of time in the kitchen helping to prepare meals. My time spent in Sardinia was helping my Italian cousins learn English while I learned Italian a very simple exchange. We did our best exchange of language and breaking down language barriers in the kitchen.
One food I learned how to prepare was Zoodles, Zucchini noodles, replacing traditional pasta. Today, I will share with you the olive oil and garlic inspired zucchini recipe we prepared weekly, and I will give it a new twist. Lavishly live food out loud and prepare Aglio e Oglio Zoodles.
