I am all about good proteins, good fats and keeping my blood sugar perfectly aligned day long. Learning how to eat right, keep my belly full while not over-doing it with improper calories is a daily chore that I keep on top of.
While I am in the kitchen preparing other treats for my family, I also always include this treat for myself as well. The combination of this gourmet mixture of nuts and seeds offers clusters or bars on the next level of taste.
Don’t buy those bagged treats in the store with so many ingredients in them your head will spin and your waist will grow, just make these. Lavishly live food out loud, and prepare nut cluster honey coconut chia bars.
Nut Cluster Honey Coconut Chia Bars
Delicious bites of wholesome nuts with a grand crunch and packed with protein and good fats that your body craves is what you are about to prepare. A skeptic overall, when I see many of the published recipes, I decided to change all that and create my own.
The ingredients in this recipe are fresh and satisfying and I think you will LOVE the crunch. Truly this satisfies bite after bite.
So what do I put into these fantastic bars? Here’s where I tell all so that you too can enjoy them. You can bake these in a counter oven, convection oven, etc. All you need is a pan and the ingredients.
Do use parchment paper, especially because of the honey factor. Also, I used coconut oil to spread across the parchment, you can spray coconut nonstick spray instead. Allow these to cool about 30 minutes before attempting to cut them into bars.
You can change up the ingredients to seeds and nuts you prefer, these were the ones I had on-hand. Basically this is a great ‘cleanup’ recipe. It cleans up all those open bags and bottles of nuts and seeds and delivers big on taste! Let’s prepare these now!
INGREDIENTS
1 C Pecans (chopped to ¼)
1 C Almond
¾ C Honey
2 Tsp Vanilla
½ C Chia Seeds
½ C Sunflower Seeds
3 Tbsp. Coconut Oil
Drip Pan without broiler top (works well)
METHOD
Line Drip Pan tray with parchment to fit. Preheat Oven to Bake, 350°.
Smear 1 Tbsp. of Coconut Oil for easy release of cluster bars at the end.
In a Large mixing cup, add in pecan, almond, chia seed, sunflower seed.
Add in Vanilla and remaining 2 Tbsp. of Coconut Oil. Cut in well and mix.
After mixing well, transfer into pan and parchment, corner to corner, pressing together.
Generously in left to right motion, from top to bottom, make lines of honey, this is your binding and sweetener. If your spatula/scraper is sticking to the honey, spray it with nonstick spray that will help a lot, trust me!
Of course you can push against the parchment paper as I did to clean up the scraper as well, but treating the scraper/spatula before you start is the key!
Place in oven, bake for 25 minutes, nuts will look golden. Don’t let them burn, there is a funky taste if you do. Trust me, you don’t want to know how I know this, but do not let them brown beyond their cooking time.
You will see a noticeable change in color, just like when you saute an onion from yellow to translucent, this turns from light to dark, easy peasy!
Remove from oven, allow to cool (30 minutes), then place a cutting board on top, reverse pans and transfer paper and bar onto the board. Do not rush the cooling process. I suggest cleaning up everything else, or refrigerating if you must push through the cutting process.
If you want nuggets or chunks, then you can cut it immediately, otherwise, let it harden just enough to cut into some nice bar pieces.
Once cooled cut into slices, or break into clusters. Enjoy.
