My family has an sweet tooth hankering that is often quite challenging because I don’t do sweets. I am consistently coming up with recipes that I think will offer them something delicious and I have to top out what I have done before. One of our favorite ways to lavishly live life out loud is a night around the fire pit! It is a lot of fun and the kids LOVE S’MORES, most of us do right. I wanted to mimic the taste but not have to light the fire pit to enjoy the taste so I created what I consider a delicious alternative for S’MORES! This recipe can be made nut free, gluten free and it still is awesome.
I was in my pantry dreaming up what to whip up and suddenly it hit me that I had all the fixings for a kicking S’More Pie. As you know I have one child with severe allergies so I made sure that he was able to eat this as well by modifying the ingredients with ones that I know are safe for him to eat! You will love this because it is pretty much effortless and the results will have everyone shutting their piehole while it is stuffed with this pie.
You will need the following ingredients. (remember you can change this all to GF, by changing brownie mix and graham crackers. If you have nut allergies, check packaging and ingredients for details, we have made this every which way).
Brownie Mix (any kind you use, or make)
One Graham Cracker Crust ( I used chocolate, you can use any)
1 cup of marshmallows
1/2 Cup of Chocolate Chips
An Oven
A Baking Pan
MIX the brownie mix according to the package. Pour into the graham cracker crust. Bake at 350 until the brownie is cooked(this seemed to take about 10 extra minutes and I am not sure why). Once baked, pull out of the oven, and place the oven onto Broil Medium. Carefully(because the brownie cake is HOT HOT HOT, press the marshmallows into the brownie top, so they are not rolling, but not really depressing the top of the brownie, just lightly indented. Then do the same with the chocolate chips. Broil, until you get that golden brown on the marshmallows. Literally this took me 3 minutes.
What you need to know: the marshmallows expand with the heat, so it will drip over, that is why I suggest using a pan beneath the brownie pan!
Let this set up and then serve! It is AMAZING!
