I will start just like this. I love making bread and I am obsessed with my bread machine. Who needs the grocery store rolls with all of the ‘extra’ little ingredients that just stick in our bodies. I like fresh bread, preservative-free and I can’t stop making bread.
Recently, while on a trip to a little place in Florida, we had the most delicious sandwiches served to us on bread that reminded me of a turtle, (the bread looked like a shell), in fact, the lady that served us told us that the bread was a roll. I just had to recreate what we had just eaten and I was not stopping until I could use my bread machine to make the recipe!
The rolls we are were Portuguese Rolls (Papas Secos). My recipe today while not perfect looking, as compared to some of those I have seen, is truly delicious. Lavishly live fresh bread out loud, and try my Portuguese Roll (Papas Secos) Recipe For Bread Machines.
Portuguese Rolls (Papas Secos)

Albeit beautiful looking, they are still missing the indent in the middle, and while I have a bit more learning to do, after using a scant of this, and a test of that, I have arrived at what I consider PERFECTION in the Papas Secos segment of my roll cooking. It’s time for Portuguese Rolls (Papas Secos) created by the bread machine and baked in the oven, total YUM about to happen.
I want to share the recipe with you, so read on and you can print it at the end of this post. The dough is fabulous, and not at all hard to work with. Trust me, there is a lot of bread I will never post about, after trying them and surviving the battles of Dough Vs. Dana, I would never put anyone through fabulous flops!
Portuguese Rolls (Papas Secos)
Wet Ingredients
1 3/4 C Hot Water (finger should just touch it and be very warm)
5 Tbsp. of salted butter (each quarter cut into ¼’s)
1 Egg White, whisked – *Do not add to dough*****
Dry Ingredients
2 Tsp Sugar
2 Tsp Mediterranean Sea Salt
5 ½ C Bread Flour
2 ½ Tsp Yeast
Bread Machine
1 Tbsp Sesame Seed ** Not for dough
1 Tsp Garlic Salt **Not for dough
Mode – Dough
1 ½ Hours is my dough mode length.
Make certain water is warm, and place the butter into the water. Place this mixture into the Bread Machine basket. Add in Dry Ingredients less the yeast.
On top of Flour, create a well with your finger so that the Yeast can be placed in there and not touching any liquid. Program Bread Machine, Close Lid and allow the dough to knead for 1 ½ Hour.
METHOD
At end of the cycle, prepare a tray with flour (about ½ c) and knead the dough lightly into ONE large ball.
Cut this ball into 1/2. Then further cut each ½ into 4 more equal pieces. Repeat with the other half.
OVEN
Preheat oven for just a few minutes to 175° Fahrenheit but do not let it achieve the full pre-heat, you just want the oven warm. After 2 minutes or so, turn the oven off. Close door, you are now ready to allow the rolls to rise once you create them.
TRAY
Have a tray lined with parchment paper, ready and waiting for each round you are about to create. Then, work with each piece of dough, creating what I made: 3” circle no more than ½” thick down to ¼” – remember these will rise again.
When you get the circle to 3 inches, I used a wooden spatula, straight edge, I put an indent down the middle and then tucked and turned the roll on the tray. Repeat this procedure over and over through all 8 rolls.
Allow bread dough rolls to sit in the oven, covered with parchment paper for about 40 minutes. Remove.
OVEN
Preheat oven to 375° Fahrenheit.
BREAD
Crack egg white, whisk. Use a brush and brush each roll with the egg white. Now you can get creative. I spattered on set with sesame seed and the other set with light garlic salt (just a pinch on each) This is optional, just an add-on I created
BAKE
Place rolls in the oven, bake at 375 ° Fahrenheit for 40 minutes, they will be light and golden brown. Remove from oven and allow to cool.
The recipe is very easy, I, however, had a bit of time, getting that indent to take. What I think is that the indent should be lightly carved with a knife rather than trying to indent it into the dough and flipping it.
I also added the sesame topping on my own, that was not the recipe we had while we were away, I just wanted a little something extra on ours.

I love how perfectly my bread turns out every single time I make it. I do love the Rapid bread making the session on here which is great when I am in a pinch for time or bread…..however… The loaves of bread turn out substantially smaller than fully cooked bread.
