In a week, I turn out meals and desserts in my kitchen as though I am a restaurant and every meal is a meal that offers up a veggie, a main dish and of course dessert. With 5 people to feed on with very different dietary needs I have learned to become quite inventive in order to make sure everyone has both a meal and a dessert without knocking myself out with effort. The CPC(Clean Plate Club) in my home is a time-honored tradition in which all those at the table must put a small bit of everything on their plate that has been prepared and clean their plates. It is not about over-stuffing, indulging or eating too much just making sure that the meals are well-balanced. When I prepare things like buttered peas that are really no one’s favorite thing it is a requirement that even if is just a teaspoon we place on their plates it must be CLEAN before the best part of the meal is served…drum-roll please: D-E-S-S-E-R-T! Exactly what is a Brookie? I was curious as well, but soon found out that a Brookie is a brownie and a cookie baked together forming a delicious, moist combination known as a ‘BROOKIE‘. The end result when baked properly offers an exposed (pre-baked, boxed cookie) in the middle of the round dessert and an outer-tube that is brownie. These are baked in a pan that looks like a large doughnut pan that has an island in the middle of each round where the cookie is placed. The combinations of cookies and brownie mixes is un-ending as you can bake: dark chocolate brownies, fudge brownies, Blondie brownies, nut brownies. To these brownies you can add, store bought, boxed cookies, like filled cookies, chocolate chips, graham cracker cookies, mint cookies, anything in the cookie aisle that is round and about 2″ across like Oreo’s or Chips Ahoy or any knock-offs of the same kind.
Ingredients You Will Need to Prepare A Brookie Tray
How much is there to prepare to make these heavenly creations known as a Brookie? Not much. You need:
Any 2 boxes of your favorite brownie mix and prepare them according to the direction on the box.
Non Stick Spray – lighty coat the pan
12 of your favorite 2″ round boxed cookies: Oreos, Chocolate Chips, etc(these are already baked from the cookie aisle)
How To Fill Tray
First fill the outer tube with brownie batter, just to the island nub in the middle. Then without covering the nub, place a cookie in the center. Lightly drizzle the cookie with brownie batter, as though you are dunking it in chocolate and fill no higher. This will allow your cookie to expose for final presentation.
Place in The Oven to bake. – I did wipe excess spillage off of the tray before it entered but that is all personal preference.
After they cooled about 15 minutes right side up, I flipped them to let the air travel to the part that needs released from the pan. Here is how that step looked:
Clean Up & The Final Product –
The pan is nonstick, making clean up and absolute breeze. The final product nothing short of amazing and 5 Star Divine! I had prepared my first batch with too much batter, but no big deal because even though the cookie was not exposed, we just placed ice-cream in the middle and then when we got to the cookie it was an even sweeter treat. Batch 2 came out perfect because I only ‘lightly’ covered the cookie on the second batch, as my hand was too heavy on the first round.
The Clean Plate Club
The CPC in our home has never been in such demand as the kids can’t wait to get to their Brookie. Had I known about the Brookie before I would have made it to get those plates(and healthy foods eaten).

While I don’t believe in bribing I sure do believe in great tasting homemade treats that taunt, tease and delight the senses and the Brookie offers just that, a way to satisfy that sweet tooth pang!
