Amazingly Simple Beef Pot Pie

Comfort foods provide a great feeling as we consume them bite by bite. 
Generally, our bodies crave one of these foods and we answer.
Foods ranging from mac and cheese, grilled cheese,  to mashed potatoes often fall into the comfort food category. 
However, these are just the beginning of the list and a few of the more popular comfort food options. 
Don't buy beef pot pie, because I am about to show you how to make an amazingly simple beef pot pie. 
Every slice of this simple beef pot pie will feel your mind with nostalgic thoughts of great family time and good days! 
Maybe you had a piece of pot pie at a family party, or with your friends at a gathering? 
Great thoughts and tasty homemade eats are the perfect combinations and amazingly simple beef pot pie touches both notions.
For years, I would travel to the frozen food department, buy those cute little boxes that contained pot pies. 
One pie per person, in beef, chicken, and turkey. 
Being able to microwave these pot pies made them perfect for weeknight dinners. 
However, really reading the contents of pot pies in the boxes, I noted a lot of sodium and unattractive additives. 
More of a natural kind of gal, I decided there had to be a better way.

Cook Time 45 minutes
Additional Time 5 minutes
Total Time 50 minutes

Ingredients
  

  • 2 Refrigerated Pie Crusts - Unrolled
  • Cream of Cheddar Soup x 2 Cans
  • 16 oz Bag Frozen Mixed Veggies corn, peas, carrots, beans
  • 1/2 Pound Roast Beef deli cut Chopped (4 - 1/4" slices -- chopped)

Instructions
 

  • Preheat oven to 400° F
  • Unroll pie crusts.
  • Place one pie crust in a deep pie baking dish.
    Pierce a few holes in it with a fork.
  • In a separate mixing bowl, combine vegetables and soup mix.
  • Mix very well.
  • Add in roast beef meat.
  • Stir to combine.
  • Transfer bowl combined ingredients to pie crust.
  • Unroll additional pie crust and cover mixture.
  • Crimp all edges to seal.
  • Be sure to cut slits about three across the top of the pie crust to release steam.
  • Bake at 400°F for 35-45 Minutes (your oven will determine) on a baking sheet (in case of spillover) until the crust is golden brown!

Notes

Roast beef can be increased or decreased.
Additionally, you can cut roast beef into strips or cubes if you prefer to not randomly chop.
You can sub in cooked ground beef crumbles if you prefer.
Veggies can be all one kind of veggie or multiple kinds, just don't exceed 16 oz.
Vegetables do not need to be defrosted.
The soup should not be prepared with water, just add it in.
