Parties are what make life's best memories. I love a good party, don't you? Whether we are attending a party or hosting it, I have a signature appetizer I craft each time. The Caprese Tortellini Skewers were inspired by one of our trips to Italy. My memories of that trip truly live on through this simple appetizer. For those who love fresh mozzarella, you will love this palate-pleasing combination on a skewer. In fact, this easy to create appetizer is perfect for those who are not fans of meat. On one skewer you will find a perfectly-portioned appetizer to enjoy, bite by bite. Those who see the platter of simply delicious Caprese tortellini skewers arrive will comment on how masterfully executed they look. What's best, is making a platter of skewed Caprese tortellini appetizers takes minutes, not hours. Yet, the platter of appetizers is stunning in both color and presentation. Simply delicious Caprese tortellini skewers are a year-round appetizer, it truly is an all-season fave in Casa Vento.

Instructions
Firmly hold the tomato in one hand and skewer in the other.
Center the bamboo skewer to the middle of the tomato.
Puncture the center of the tomato and slide it to the top of the skewer.
Next, center up a mozzarella ball and push it to right beneath the tomato.
Now fold a large basil leaf in half and push it up 'gently'.
Follow with tortellini, then another tomato, and end with a mozzarella ball.
Plate each one.
Cover and refrigerate if not immediately serving.
Also, you can drizzle these with a balsamic dressing. I don't because of the dripping mess but many do.
