Preheat Oven to 375° F
Line a baking tray with parchment paper.
Open biscuits.
Separate biscuits into 8 pieces.
Cut each biscuit in 1/2 so there till be a top and a bottom (16 pieces instead of 9)
Align the biscuits on the tray, open, but with space between.
Once all are open-faced, sprinkle with your spice of choice.
Follow with a sprinkling of garlic salt across all.
Place a generous portion of pepperoni on each of '8' biscuit pieces.
Now, using 6-8 pieces of pepperoni, (remember biscuits puff and you don't want to taste biscuit, just pepperoni).
Follow with about a tablespoon (give or take) of cheese per biscuit (Generally less, but you can add more or less as you desire).
Replace the top part of the biscuit to each pepperoni-topped bottom.
Space each biscuit appropriately.
Place in oven and bake for about 20 minutes.
Some ovens heat faster and these may be done more around 15 minutes, you know your oven so watch your food.
When they are done backing (golden brown), pull them out, and allow to cool.
IF you want to add an egg, make that sunny-side egg or scrambled now.
By the time you are done making the egg, the pepperoni biscuit will be cool enough to enjoy.
