Simple Holiday Eggnog

Before the parties, and all the fun, you make the holiday special with food and drink preparation.
Every holiday I make fresh-crafted, holiday eggnog.
It's better than any holiday eggnog in a carton, and the simple ingredients keep it easy to recreate. 
What's best about this simply holiday eggnog is that you can tweak how light or strong the spices are.
In fact, I don't use traditional spices as most do, and my recipe years ago, was created through what spices we had in our home. 
The holidays in our home are special because of traditions, and special foods and drinks offered throughout the season.
The simple holiday eggnog is part of our holiday tradition, and when you see how easy it is, I bet it will become part of yours as well.

Servings 3 - 8oz servings

Ingredients
  

  • 1/4 C Mulling Spices
  • 6 Egg Yolks
  • 1/4 Teaspoon Vanilla
  • 1 Tablespoon Rum Extract
  • 2 C Milk
  • 1/2 C Granulated Sugar
  • A cup of Heavy Whipping Cream

Instructions
 

  • In a large saucepan, add milk, heavy whipping cream, and mulling spices.
  • Mix well and then cover. Cook on medium/low heat to a simmer. 
  • Next, while this is coming to a simmer, prepare the egg mixture. 
  • Like I mentioned I prefer using a blender for this. I used my Ninja
  • In a blender mix egg, pulse, then add in sugar and pulse again to mix well.
  • Once prepared it's time to add to milk mixture. You are going to temper the eggs. 
  • Remove lid, stir one more time, then add the egg, a little at a time (tempering), stirring constantly, until the entire mixture of an egg is added to milk mixture. 
  • Now, whisk constantly or stir and then temp read the mixture, you want 160° and no higher, then remove from heat. 
  • Place the strainer over the bowl, and pour the mixture through a strainer.
  • Make sure to use a bowl that is big enough to support the strainer and liquid. 
  • Add in rum and vanilla extract.  (at this point if you are going to make it alcoholic, you can add in a few shots of your favorite spirits. )
  • Serve warm or allow to chill.
  • Pour into glasses or mugs, top with whipped cream and a dusting of nutmeg
