Slice Boursin Cheese into 8 cubes so that it will mix in easily.
Turn Pressure Cooker to Sauté mode.
Add oil, and potatoes and salt and pepper and stir.
Allow mixture to lightly cook potatoes, about 7 minutes’ total, mixing regularly.
Add in Boursin Cheese.
Add in Cheddar/Mexi Cheese mix.
Add in Bacon.
Turn off Sauté.
Put lid on pressure cooker, lock and choose Rice Setting.
Program to 16 minutes.
Allow To cook, and pressure to naturally release
(if you choose to immediately release pressure, cover the gauge so nothing ‘spits’ and release pressure)
Garnish with fresh cut chives & plate, serving warm.
