Ingredients
  

  • 5 Strips of bacon use pre-cooked microwaves and chopped
  • 1 5.2 z Boursin Cheese chive & onion Optional (cream cheese instead)
  • 1 ½ C Mexi-cheese mix
  • 1 tsp Mediterranean Salt
  • 1 tsp Pepper
  • ¼ C Water
  • ¼ Chives
  • 8 C Red Potatoes cleaned, cubed
  • 2 Tbsp. Canola Oil

Instructions
 

  • Slice Boursin Cheese into 8 cubes so that it will mix in easily.
  • Turn Pressure Cooker to Sauté mode.
  • Add oil, and potatoes and salt and pepper and stir.
  • Allow mixture to lightly cook potatoes, about 7 minutes’ total, mixing regularly.
  • Add in Boursin Cheese.
  • Add in Cheddar/Mexi Cheese mix.
  • Add in Bacon.
  • Turn off Sauté.
  • Put lid on pressure cooker, lock and choose Rice Setting.
  • Program to 16 minutes.
  • Allow To cook, and pressure to naturally release
  • (if you choose to immediately release pressure, cover the gauge so nothing ‘spits’ and release pressure)
  • Garnish with fresh cut chives & plate, serving warm.

  • Pressure build = about 10 minutes
  • Cook Time 16 minutes
  • Total Cook time 33 Minutes
