Turkey Burgers With Rapini And Feta

Ingredients
  

  • INGREDIENTS
  • 1 # Of Ground Turkey
  • 1 Large Mixing Bowl
  • 2/3 C of Feta not in water
  • 1 C + 1/2 c additional as needed Panko Bread Crumbs
  • 1/2 C Chopped & Steamed Rapini 4 Tbsp of Water, 1 Tsp of Olive Oil and Sprinkle with Salt

METHOD

  • RAPINI Preparation 
  • Clean Rapini (follow my How To Clean Rapini)
  • Chop Rapini into smaller pieces (1 C Uncooked)
  • Place Rapini in 4 Tbsp of Water, 1 Tsp of Olive Oil and Sprinkle with Salt
  • Place Mixture of Rapini into Microwave and Steam down for 3 1/2 Minutes.
  • Remove from microwave, place into a colander, drain by pressing with a spoon against the rapini. 
  • Chop rapini into smaller pieces because you are going to mix this into the turkey mixture. 

TURKEY MIXTURE

  • Use large mixing bowl and place turkey, Panko (1 C), and feta.  
  • Squeeze together mixing with your hands. 
  • Now add in the Rapini.  If mixture is not able to be formed into patties, add additional 1/2 C of Panko
  • Once the mixture has all ingredients, begin to form into patties. 

GRILL

  • Cook burgers on side 1 for 5 minutes and then turn and cook for an additional 3.
  • Remove from Grill and serve, refrigerating any leftovers.
