Power Greens and Scrambled Eggs
Using easy-to-find ingredients create a super healthy verstile green veggie scamble that you can eat morning, noon or night!

- 1 tbsp Extra Virgin Olive Oil
- 1/2 c asparagus chopped to 1/4-1/2" each piece
- 1 c baby spinach
- 1 tbsp Ghee
- 6 large organic eggs (cracked + whipped with whisk + 2 Tbsp of Water
- 1 c baby kale (optional)
- 1 large AVOCADO (cubed)
- salt and pepper to taste
- 1 green onion or chive chopped (optional)
Place Olive oil, ghee, spinach and asparagus in frying pan using medium low heat
the spinach will wilt, and the asparagus will be a slight bit crisp. You can cover but you do have to stir.
Add in the eggs and make sure to scramble to cook throughout all the foods in the pan. (about 5 minutes max)
Remove from the heat and you will prep to serve or store
2 options for serving
transfer mixture to a serving dish (if serving) and add your cubed/diced avocado atop plus a generous sprinkle of boht sea salt and pepper.
Alternatively, served atop a piece of bread, stack asparagus first, then scrambled egg, top with avocado chunks and optional arugala and chopped chive
