My incredibly healthy chopped Feta Shrimp salad with a rice vinaigrette dressing complies with your clean eating! 
For me, it's all about greens and proteins and keeping seafood in my diet. 
While I don't eat meat, I do consume some serious amounts of seafood! 
A treasure payload of rich in nutrient and vitamin greens fill this chopped salad and the vinaigrette keeps it light and tasty! 
What's more important is that rice vinaigrette is less acidic than other kinds of vinegar. 
Better yet, the vinaigrette enriches the vibrant flavors together.

Incredibly Healthy Chopped Shrimp Feta Salad With Rice Vinaigrette Dressing

Fast food preparation is a must during the week. 
After all, I am sure you are famished when you come home just like me. 
I don't like hard-to-create recipes so I never make them. 
Rather, I prefer made-fresh, mixed greens in a bowl with a protein. 
Some of the work can be done ahead of time so that you can just toss it all together. 
Plus, with all of the great packaged lettuce options you can buy the lettuce cleaned, bagged and cut! 

Measuring is not a thing when it comes to salad prep & my incredibly healthy chopped Feta Shrimp Salad

Just a side note, before I go on. 
Salad is one of my favorite foods. 
Therefore, there are no specific measurements. 
I generally use an over-sized bowl and fill er' up. 
Generally, I a generous handful of 2 types of lettuce and plenty of tomatoes. 
Veggies can be changed up for others you might prefer, including avocado, which I usually add in too! 

Mix Up That Rice Vinaigrette Dressing

Mix 1/4 C of Mizkan Rice Vinegar, with a few teaspoons of Extra Virgin Olive Oil. 
Add stevia (just a pinch), mix, and then a 1/2 teaspoon of dijon mustard. 
Mix rapidly. Drizzle over the salad. 

My incredibly healthy chopped Shrimp Feta Salad

Place your chopped butterhead lettuce in the bottom of a large bowl. 
Next, add the arugula, and mix to combine. 
Add in tomatoes, alternating color around the outside border. 
Now, toss on cucumbers, chopped carrots, green onions, and Feta. 
Place chopped shrimp atop all veggies. 
You can add 2 whole shrimp to the top as well. 
Drizzle with dressing. Serve and Enjoy!

Ingredients
  

  • For the Salad
  • 1-2 Cof Buttercrunch lettuce red and green for color appeal
  • 1 C of Arugula
  • 2 Pickling cucumbers peeled, chopped.
  • 1/4 C of an oversized carrot peeled, sliced, chopped.
  • 3 Tablespoon Green Onion tops. Rinsed and chopped.
  • 9-10 Cooked deveined, peeled, shrimp. Defrosted and chopped.
  • 4-5 Tablespoons of Feta Cheese.
  • For the Rice Vinaigrette Dressing
  • 1/4 C of Mizkan Rice Vinegar
  • 3 teaspoons of Extra Virgin Olive Oil.
  • A Pinch of stevia
  • 1/2 teaspoon of dijon mustard optional but amazing!

Instructions
 

  • Mix 1/4 C of Mizkan Rice Vinegar, with a few teaspoons of Extra Virgin Olive Oil.

Notes

You can prepare the salad before or after the rice vinaigrette, it is all up to your timing.

Baby Butterhead - in Red and Green. 

Butterhead lettuce is available in a range of color, but the taste and texture don't change! 
Color makes a good salad, better. Not by flavor, but the color is appealing to the eye. What looks good must taste great. 
To CHOP butterhead lettuce, I use kitchen scissors. Scissors allow me to chop without 'mashing' the leaves. 

Arugula Lettuce Chopped for my incredibly healthy chopped Feta Shrimp Salad with Rice Vinaigrette Dressing

Rice Vinegar had me at 'Less acidic.' Have you ever had a vinegar that is just too tart, because it overpowers the lettuce? 
Not rice vinegar. In fact, I love Rice Vinegar atop arugula. 
Arugula has a light mustard taste in addition to being a bit peppery.  
Rice vinegar sails when combined with mustard. It's flavor compliments the Arugula like no other. 
You don't even need the vinaigrette recipe I am about to share, however, when you lettuce types, you won't want to miss the dressing recipe. 
Again, to chop Arugula, just use the kitchen shears and cut it to really tiny pieces. 

Cucumbers, large carrots, rainbow grape tomatoes, and green onions 

Use pickling cucumbers for a firmer cuc and better taste.
Use those big carrots, because they are easier to work with when chopping. 
As far as the rainbow grape tomatoes, their job is for color.
Also, if you have someone who hates tomatoes, their GUTS stay inside unless eaten. 
Green onion tops are chive-like in presentation.
