For The Cake Mix Preheat your oven according to cake instructions Spray Cupcake pans with plenty of non-stick spray In a large mixing bowl, prepare boxed cake mix according to directions Fill Pastry Bag with Cake Batter Dispense batter, cavity by cavity with a pastry bag, filling to the top of cupcake cavity Bake according to box directions Remove From Oven and allow to cool right side up for 20 minutes Place Cupcakes then on cooling rack right side down for 20 minutes and then remove from pan (they should just fall right out) Slice the Bottom off of each cupcake (which is actually the top, making it flat) !For The Icing Place Whipped Topping into a large mixing bowl Add Food Coloring GREEN to it and mix well Use a Spatula and coat each cupcake INVERTED, so fat side down Make sure to not over-ice as you want to contour and show the intricacies of the contouring Around the Brim of the cupcake where the flat part meets the little part, trace with Black Gel Dead Center Add an M&M (Yellow) Allow To Set Continue until all the Leprechaun Hats are complete. Refrigerate any uneaten Leprechaun Hats.
