Shrimp Scampi Almost With Zucchini Noodles

Craving seafood and something that is different? 
That's me, every day. 
I take common ingredients, staples that I have in my fridge and freezer and create fabulous dishes. 
Do you realize that a zucchini offers a nice refrigerated shelf life UNTIL you cut it? It's true. 
Stocking a few in the crisper is a good idea. 
Since I don't eat meat but I will consume certain seafood, and shrimp is one, it's always on-hand. 
Take stock of your freezer and refrigerator, check out my recipe (scroll to the end for ingredients) and then get ready to be Wowed! 
Zucchini noodles are simply zucchinis spiralized into noodles and I make them almost 5x a week!

Ingredients
  

  • FOR ZUCCHINI NOODLES
  • 2 C Large Zucchini Noodles
  • 1 Garlic Clove peeled and sliced or 1 Tbsp Minced
  • nonstick oil in fryer basket
  • Salt and Pepper To Taste
  • *Optional Red Pepper Flakes if you like a little heat!
  • FOR THE SHRIMP SCAMPI
  • 9 Fully cooked Shrimp deveined shrimp, tail on, Defrosted.
  • 2 Garlic Cloves (or Minced Garlic ) peeled and sliced.
  • Salt and Pepper to Taste
  • 1 tbsp Vinagrette (Braggs or Walden Farms)
  • 1 tbsp Capers (drained)
  • 1 tbsp Lemon Rind grated with zester
  • Dash of freshly milled pepper optional

Instructions
 

  • preheat air fryer to 400°F (for skillet method see notes below)
  • Treat air fryer basket with non stick spray
  • add in combined garlic and zucchini noodles
  • cook for 5 minutes then remove basket. Drain zucchini water and level out zucchini noodles
  • replace basket and cook for 4-5 minutes more.
  • Remove. Sprinkle with salt and pepper to season. Set aside
  • Next, in the air fryer basket place the shrimp, and garlic. (reserve if any the marinade for After the shrimp come out of the air fryer and toss it onto the warm shrimp)
  • Allow mixture to begin to cook a bit and garlic to soften slightly (about 5 minutes)
  • Air Fry for 4 minutes on 400°F
  • Open, mix, and remove from air fryer basket.
  • toss in capers.
  • place atop zuccini noodles
  • add a quick zest of lemon
  • ENJOY!

Notes

For Skillet Follow this 
In a small nonstick skillet, place garlic, and zoodles. 
Pan fry quickly to soften but yet al dente.  4-5 Minutes 
First 2 minutes cover, last 3 minutes uncover. 
Medium heat. 
 
For Shrimp. 
Remove zucchini from pan. 
In the same pan add the shrimp, garlic, and the vinaigrette. 
Cook on medium low. 
Allow mixture to begin to cook a bit and garlic to soften slightly (about 5 minutes) 
Cover. 
Once the garlic is softened remove from heat and add drained capers
