Guacamole Salsa

In our home, weekends signify "Bring On The Party" as workweeks are long and weekends are short, life needs to be celebrated.  
Actually, one of my staples for our dipping pleasures is Guacamole Salsa.
The combination of fresh ingredients, coupled with an Under 10 minute prep time, makes this a sensational party food.
As easy to prepare as it is delicious to taste by the spoonful--shhh, it's sure to become one of your favorites too. 
In fact, like mine, it may become the single most requested dip for tortilla chips!
To that end, I am about to share my most coveted recipe for Guacamole salsa so you can dish it up! 
Try it out and see if you too love Guacamole Salsa. 
Who knows, this and a Pear Margarita and you might soon you will be saying, "OLÉ!"

Ingredients
  

  • 3 Avocados - rinsed peeled, pitted
  • 2 Tablespoons of Olive Oil Extra Virgin is what I always use for the recipe
  • 1 small onion - peeled chopped it's about 1/2 cup
  • 3 Cloves of Garlic - peeled
  • 1/4 C fresh Cilantro - rinsed lower stem removed, and reserve a sprig for decor.
  • A large lemon rinsed, cut, squeezed.
  • Pinch of Salt and Pepper to taste
  • A - 10 oz. can of Petite Diced Tomatoes with green chilies drained.
  • *optional, chop 3 medium tomatoes & a mild chili pepper or jalapeno
  • Tortilla Chips colorful ones for the season

Instructions
 

  • Using a food processor, place avocado, olive oil, onion, and garlic inside and pulse to 'puree'.
  • Open and add in lemon juice.
  • You can pulse to leave chunks or you can go smooth, really your choice.
  • Fold tomato mixture in by hand and a quick dash of salt and pepper.
  • Place in a serving bowl (or refrigerate if not using immediately)

    Top with a sprig or two of fresh cilantro

    Add Chips to a Bowl and serve with Guacamole Salsa.
  • Enjoy!

Notes

When the season is appropriate buy the red, white and blue chips it makes a great presentation for the Summer Holidays.
During the Fall and Winter holidays, you can always do a play on red and green, '
Dress up Guacamole Salsa with a few sprigs of red bell pepper strips to give it a more festive bolster and around pumpkin time, use orange bell pepper strips!
This recipe rocks each holiday, party, and season, and the ingredients are always in season!
