Preheat your oven to 350° F.
Prepare 2 large baking trays, by covering with a piece of parchment paper each or a silicone mat each.
In a deeper mixing bowl, place, butter, sugar, and egg.
Cream them together well.
Next, it's time to add 3/4 of the pouch of lime gelatin.
Combine with the other ingredients and pour the 1/4 bag of the mixture into a rimmed shallow bowl or cup and set aside.
Add in the fresh lime zest and mix well.
If the green is NOT enough, then add a few drops of GREEN Food coloring. However, if it's fine, just move to the next step.
Now place, baking soda, baking powder, and 2 1/2 C of flour (reserve 1/2 c).
Once mixed, see how 'sticky' your dough is.
If it is too sticky, you will want to add more flour, but not more than 1/2 a cup.
Rather than tossing in the full 1/2 C place it in 1/4 C at a time and see if the dough firms up just a bit.
Roll the ball into a large ball in the well of the bowl.
Next, you will use a cookie scoop and grab a ball at a time, and then place the ball into the reserve lime gelatin.
Remove from the gelatin-dip onto the tray and flatten. (please note, I used the bottom of a drinking glass and I coated it LIGHTLY with flour so it did not stick).
You are not SMASHING the cookie flat, just not leaving it in a large ball.
Bake at 350°F for 12-15 minutes depending on your oven.
Don't let them brown or they have baked too long.
Remove from oven, and allow the tray to cool about 5 minutes before removing to a cooling rack.
