Pita Bread

Simple pita bread recipe using yeast, make pitas in air fryer in 4 minutes or in a frying pan in 7.
Prep Time 7 minutes
Cook Time 4 minutes
Dough Rising 2 hours
Cuisine bread
Servings 20

Equipment

  • Air Fryer, mixing bowl, wooden spoon, rolling pin, fry pan

Ingredients

  • 4 ½ c All Purpose Flour
  • 2 ¼4 tsp Instant Yeast
  • 1 c Water Boiled and slightly cooled
  • 2 Tbsp Greek Yogurt
  • 1 Tbsp sugar
  • 2 Tbsp Olive oil extra virgin
  • 1 Teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt iodized

Notes

Boil Water, set aside.
Prepare a bowl with flour, and yeast.
Once the water is cooled slightly (3 minutes), add it to the yeast and flour.
Mix to combine.
Add in the yogurt, sugar, olive oil, baking powder, baking soda, and salt.
Now it's time to combine the ingredients well.
If you are using a stand mixer, combine them on a low setting.
Combing by hand make sure ALL ingredients are thoroughly mixed within.
Once the mixture is a shaggy mess of dough stop mixing.
If you are using a freestanding mixture, change the paddle to the hook.
Allow this to work for 7 minutes.
However, if you are kneading dough by hand, you will then transfer the dough to the counter and knead for about 10 minutes until the dough is shiny and smooth.
Once you've kneaded the dough via the dough hook or hand, it's time to transfer it to a bowl.
Cover with plastic wrap and place in an unheated oven with the light on only to double in size. You can wait as little as an hour or as much as 2 hours to being working with the pitas.
Once the dough has doubled in size, cut a small ball (about 3 inches by 3inches or so)
Then using a rolling pin roll it into a circle.
Flat is good, look at my photo for reference.
Air Fryer Method:
Place this on a piece of parchment paper and coat each side with olive oil.
Preheat the air fryer to 380°F and initially spray the basket of the air fryer with nonstick spray.
Once the air fryer is heated, program 4 minutes on the timer.
Place your pita in and allow it to air fry for 4 minutes.
You can turn it in at 2 minutes but I generally don't.
Once the pita is done, remove and place on a cooling rack in a deep bowl, and cover.
You could choose to add butter across it or just place it in the bowl.
Repeat the process until you have cooked all the pitas.
For the Stovetop
Using a preheated, medium-low heat, and a nonstick pan with a lid.
Add just a tablespoon of butter, initially but only when you drop the pita dough in.
Don't let it sizzle. To do this, put it in at the same time you put in the first pita.
Cook the pita for about 3 minutes on side one (covered)
Then turn and cook for 3 more minutes up to 4 covered on side 2.
Remove.
Repeat the process for each additional rolled pita, just don't add any more butter as you go.
As you remove the pitas, add them to a cooling rack in a bowl. If you don't use a cooling rack in the bowl, the bottom pita may turn soggy from being covered.
(Tip - I use my instant pot cooking rack in the bowl)
Store unused pitas in a zippered plastic bag in the fridge for 3 days on the counter for 2.
