Method
- Place Olive oil, ghee, spinach and asparagus in frying pan using medium low heat
- the spinach will wilt, and the asparagus will be a slight bit crisp. You can cover but you do have to stir.
- Add in the eggs and make sure to scramble to cook throughout all the foods in the pan. (about 5 minutes max)
- Remove from the heat and you will prep to serve or store
2 options for serving
- transfer mixture to a serving dish (if serving) and add your cubed/diced avocado atop plus a generous sprinkle of boht sea salt and pepper.
- Alternatively, served atop a piece of bread, stack asparagus first, then scrambled egg, top with avocado chunks and optional arugala and chopped chive
