Shrimp and Roasted Red Peppers with Shaved Parmesan



  • 1 c of cooked shrimp tail off and cut into pieces
  • 1/2 C of Celery deveined, peeled and cut into small pieces.
  • 1/2 C of Jarred Roasted Red Peppers drained, and cut into bite-size pieces
  • 1/2 C of Cooked Brown Rice/Basmati Rice your choice or a mix
  • 4 Tbsp Of Shaved Parmesan


  • Place celery and roasted red pepper in a mixing container.
  • Mix together, the juice from the drained roasted red pepper will actually take over the seasoning on this.
  • Add the shrimp. Stir.
  • Mix together well and then top with parmesan.
  • Dish out a scoop of rice and then top with shrimp, roasted red peppers and celery mixture.
  • Top off with a bit more shaved parmesan and serve.
