Method
- In a large saucepan, add milk, heavy whipping cream, and mulling spices.
- Mix well and then cover. Cook on medium/low heat to a simmer.
- Next, while this is coming to a simmer, prepare the egg mixture.
- In a blender mix egg, pulse, then add in sugar and pulse again to mix well.
- Once prepared it's time to add to milk mixture. You are going to temper the eggs.
- Remove lid, stir one more time, then add the egg, a little at a time (tempering), stirring constantly, until the entire mixture of an egg is added to milk mixture.
- Now, whisk constantly or stir and then temp read the mixture, you want 160° and no higher, then remove from heat.
- Place the strainer over the bowl, and pour the mixture through a strainer.
- Make sure to use a bowl that is big enough to support the strainer and liquid.
- Add in rum and vanilla extract. (at this point if you are going to make it alcoholic, you can add in a few shots of your favorite spirits. )
- Serve warm or allow to chill.
- Pour into glasses or mugs, top with whipped cream and a dusting of nutmeg.
