One thing for certain, Muffin Tops (or overflowing cupcakes) now have a way to be uniquely used!
RECIPE for Leprechaun hats
You will need a boxed cake mix or angel food cake (my preference after years of doing these).
Any flavor and any brand will do.
Do note, we used a boxed cake mix that was nut-free.
Non-stick spray, cupcake pans, disposable pastry bag and tip, and a preheated oven all will help you to facilitate this project.
To create the icing, you will need, Whipped Topping Defrosted, Writing Gel in black, as well as yellow mini chocolate-coated candies.
Don’t forget to have plenty of green food coloring on hand.

While the cupcakes are baking prepare the icing.
Once the cupcakes are done, remove them from the oven.

Icing For The Leprechaun Hats
Mix the food coloring into the whipped topping well.
Ice each cupcake.
Use a line of black to define the hat.
Add a Mini M&M to finish.
Refrigerate any leftovers.
Let’s Look At the How To In-Depth
Place Cupcakes then on a cooling rack right side up for 10 minutes.
Then, turn it upside down for 20 minutes and then remove from pan (they should just fall right out).
Below is a regular cake mix with funfetti through it.
But I much prefer Angel Food Cake. ⇓
If you just add extra fill in, it turns into a ‘muffin-top’
Clearly you can see WHY I prefer the Brims on the Angel Food Cake batter better.
It’s so much easier to work with.
Then invert and your hat is ready and waiting!
The Icing
Place Whipped Topping into large mixing bowl
Add Food Coloring GREEN to it and mix well
Make the Green stronger or lighter, you can see I’ve done it every which way.
I’ve left my older images so you see you can create any color green.
Use a Spatula and coat each cupcake INVERTED, so fat side down.
Make sure to not over-ice as you want to contour and show the intricacies of the contouring.
These are my older photos!
Oh, how much my job has changed over the last 5 years!

Cook’s Notes For Leprechaun Hats
It is very important that you slice what used to be the TOP of the cupcake FLAT For these to work if you use a cake mix and not angel food mix.
Use a very small serving dish to make these look great.
Contour the icing so that it looks just right and HUGS the form of the hat, do not over ice, keep it simple and light.
DO refrigerate if you are not serving immediately.
