While I love cooked food, the glass noodles can be of a ‘squishy texture’ and the veggies are softer in texture as well.
So, to change that, I also cut up extra strips of peppers and toss them into the bowl.
This is totally optional, but really tasty and makes for a differing texture in each bite!

In spite of being ready to devour anything not locked down and eating bad junk food, I prepare this meal religiously each week.
It’s important to realize that those veggies you purchase each week can be introduced into this and cook in no time!

You can precook the Glass Noodles days ahead and add a little oil to them to keep them from sticking to one another.
For this reason, it’s a perfect go-to meal during the week.
Plus, with all of the great packaged pre-cut veggies in the store produce aisle, you can buy the veggies already cut, cleaned, and ready to be cooked!
Measuring is not a thing when it comes to bowl prep
Just a side note, before I go on.
Bowls are great food and one of my faves to prepare.
Therefore, there are no specific measurements.
If you prefer 2 portions of the glass noodles make them.
I generally use an over-sized bowl and fill er’ up.
However, I do not fill it with all Glass Noodles, those I portion to keep skinny on the carb intake.
For the most part, I keep staples like carrots, green onions, shiitake mushrooms, and tri-colored peppers in my fridge.
Veggies can be changed up for others you might prefer, including bigger chunks instead of skinny sticks and things like zucchini, cabbage, maybe some ginger, large white onion pieces, and so on.
You can add far more veggies and fewer glass noodles or more glass noodles and fewer veggies.

Ingredients
- Veggies For The Bowl
- A Portion of Glass Noodles Cooked and drained.
- 1 Large Garlic Clove
- 1/4 Section of Each Color of Pepper Red, Orange, YellowTri-Colored Peppers (you can use plain green but that is so blah!) 1/2 C total or more as you prefer
- 10-12 Snow Peas
- 1/4 C Shiitake Mushrooms Sliced Thin
- Long Carrot shavings as many or as little as you like
- Frying Pan & Lid
- 2 Tbsp Oil
- Mizkan Mirin
- 1 TBSP Soy Sauce
- Glass Noodles 1 portion - generally in a bag there are 3 portions
- Vinaigrette Dressing
- 1/4 C Mizkan Natural Rice Vinegar
- 1/2 C Oil OO or Any other
- 1 Tsp Dijon Mustard
- 2 Tsp Agave
- 1-2 Tsp Lime Juice
Instructions

- You’ll start this recipe by cooking your glass noodles also known as bean threads.
- Use the directions on your bag to cook.
- Then, set them aside once cooked and drain!
Veggie Prep
- Place your garlic clove in the oil.
Once it begins to sizzle, it’s time to add n the pepper strips and carrots. - Also, add in your soy sauce and Mirin.
- Stir, and then add in the snow peas.
- Then once the snow peas have changed in color a bit, add in the mushrooms.
- Cover for 2 minutes. Remove from heat and uncover.
Rice Vinaigrette Dressing
- Using a glass jar combine the following ingredients.
- Natural Rice Vinegar, oil, agave, lime juice, Dijon mustard.
- Place lid on the glass jar and shake until combined.
