I simply can’t believe it is time for back to school grocery shopping. My life and my kids life is about to change. Soon, the mornings that we are settling into with loads of shut eye are going to be replaced with furious paced morning routines.
Groggy-eyed kids, the sound of school buses loading, and schedules that move faster than lightening will replace that calm summer pace. I am so not ready for the back to school and I don’t think the kids are either.
My back to school preparedness starts with making easy and delicious recipes that allow everyone to eat foods they like and for me to keep it simple. One of our favorite school night meals are walking tacos because they are as easy to make as they are to serve and oh so portable.
Load those refrigerators with plenty of great beverages, stock the pantries with snacks, and all types of food options because it is Back to school ready time. Lavishly live food out loud and make sure to print my walking taco recipe because it’s fast, easy and makes dinner easy especially during those busy school nights.
Fill Those Grocery Carts
First things first, it’s time for a grocery shopping trip to our Giant Eagle. Giant Eagle is the best place for getting ready for Back to School and I only shop at the best for my family! At the end of every great aisle I find great choices, because displays lead the way back to school.
What Will I Find While I Shop?
My one lunchbox find were the Oreos and Multipacks in this display which grabbed my attention. Of course I tossed some of these delicious treats into my cart. My thoughts: every lunchbox needs a little Oreo love, right and so does my office desk drawer!
In another aisle, I found my son’s favorite Goldfish and these are perfect for car-toting back and forth to hockey, so into the cart they go! We also grabbed Entenmanns Little Bites because they are perfect on the go.
Mornings need a good start and if I can’t get them to eat a lot, then at least if I provide some great Bolthouse Juice. These are my go-to for juice and my kids LOVE them. Giant Eagle rocks the assortment as you can see and once I have them in my cart, I can rest easy knowing they have some of the best beverages available in their belly.
Capri Sun juices are just the perfect grab, because they tote so well, whether I pop them into a lunch box or into a hockey bag, they are just the answer to the need to quench thirst. We love portable snacks so we grabbed some Giant Eagle String Cheese too. I love that they are having a bit of dairy in their diet, so I buy multiple bags.
The Secret To My Walking Taco
Frito Lay Multipacks Snack Packs are perfect for lunches but they are also perfect for meals on the go. If you have never made a walking taco, you gotta try my recipe. Grab your snack-packs from the display like I did and let’s get cooking.
As you can see going to Giant Eagle is the easiest and most convenient option, with the greatest variety of products to find items for a packed lunch for school kids no matter how young or old and no matter what recipe you want to create.
Walking Taco Recipe
First create your taco mix, you can make ground beef, shredded beef, chicken or seafood, it’s all up to you. I used ground beef. (everyone has their own favorite taco recipe, so use that)
Next, clean and prepare those toppings: lettuce, tomatoes, red onion, dip (or sour cream), shredded cheese and taco sauce.
How To Assemble The Walking Taco
Dig into that purchased multi pack of Frito Lay snacks and get the Doritos and Fritos from this pack. Hold the bag, longways, and cut it straight across as I am doing in the photo, use kitchen shears.
Once it is open then take it and give it a crunch with your hand as you can see in my left hand the bag is just sitting and I am crunching it a bit. Now open it up, I prefer to add the meat and the cheese first, this way the cheese blends in and melts (because the meat is warm).
Add in the lettuce, a scoop of sourcream, and a plastic fork to keep cleanup easy! That’s it and it is that easy.
Here’s A Look At Our Spread
We make sure there are plenty of great beverages, from Bolthouse to Capri Sun, string cheese from Giant Eagle for simple snacking while getting the plates together (of course), fun chips to choose from to make the walking tacos and plenty of toppings.
Some of our toppings for the walking taco differ each time we make them: lettuce, tomato, red onion, shredded cheese, diced avocado and taco sauce.

- Your Favorite Taco Recipe already prepared
- 1 bag of Multi-pack Snack Packs
- 1 Pair of kitchen shears
- 1 C of chopped lettuce (optional)
- 1 C of chopped tomato (optional)
- 1 C of diced avocado (optional)
- 1 bottle of taco Sauce
- 1 16 oz Bag of Shredded Cheese
- Choose one snack pack of chips
- Place the bag horizontal and cut across the top (about 1/4")
- Crunch bag in hand with chips to crunch them all up
- Take 3 Tbsp of your taco meat (whatever you made, chicken, beef, meatless, etc)
- Place a handful of shredded cheese on the meat
- Place lettuce, onion, avocado - whichever or none (all optional)
- Place sour cream on top
- Serve with a plastic spoon or fork
While I can’t believe we are headed back to school, at least I have my supplies ready, my pantry stocked and some of my easy and fun recipes ready to go. Anything that makes organized chaos run smoother gets the seal of approval from this mom. My one stop shopping is all compliments of our Giant Eagle.
