Cream of Potato Protein Soup: A Blend of Convenience and Quality
The beauty of this cream of potato protein soup recipe lies not just in its ingredients but also in its versatile cooking process.
I started off on the stovetop – a traditional and effective way to get those flavors to really know each other. The sautéing of the onions, carrots, and celery, followed by the gentle simmering of the broth with the instant potatoes, on my stovetop. This is where our soup began to take shape, with each ingredient contributing its unique taste and texture.
But here’s where I added a twist to the tale – after getting the base of our soup ready on the stovetop, I decided to transfer it to a slow cooker.
Why, you ask? Well, the slow cooker is an excellent tool to keep the soup warm without further cooking it. This was especially important because I wanted to add the Greek yogurt and sharp cheddar cheese at the end without risking them being overcooked or curdled.
You could very well continue the entire process on the stove, keeping the heat low and slow. This approach would also work perfectly for adding the yogurt and cheese, ensuring they meld into the soup gently, enhancing its creaminess while maintaining a perfect texture.
In essence, whether you choose the stovetop or the slow cooker for the final steps, the key is to keep the heat gentle. This method ensures that our protein-packed, flavorful cream of potato protein soup stays warm, inviting, and utterly scrumptious, ready to be served whenever you desire.
How To Make Cream of Potato Protein Soup
Veggie Prep: Start by heating olive oil in a large pot. Add the onions, carrots, and celery, cooking them until the onions become translucent and the veggies are tender.
🛑🛑↓↓↓ PRO TIP/INSIGHT ↓↓↓🛑🛑
Do not undercook the veggie portion you really don’t want any CRUNCH in the celery or the carrots, so either use a food processor to get these small enough to cook quickly or let them sautee as long as necessary to become SOFT!
Simmering Broth: Pour the broth over your sautéed veggies. Let it heat until it starts to gently boil, simmering enough to let the flavors come together.
Potato Thickening: Lower the heat. Slowly mix in the instant potatoes, stirring until you get a nice, thick consistency. The potatoes are great for thickening and adding that comforting potato flavor.
Pro Stirring Tool: This is my favorite bamboo stirring spoon because the ingredients move through it. I use it with anything that I stir from sauce to soup on the stove!
Cheese Please: It’s time for the cheese. Add the sharp cheddar, stirring it into the soup until it’s fully melted and integrated, giving you that delicious, cheesy richness. You do have to stir to get a smoother less lumpy look.
Protein Twist: Remove the pot from the heat. Carefully blend in the Greek yogurt, ensuring it mixes well for a creamy, smooth texture.
Seasoning and Flavor: Season with salt and pepper. You can also add garlic powder or your choice of herbs to enhance the flavor.
Garnish and Serve: Serve the soup in your favorite bowls, garnishing with crispy bacon bits on top for an extra layer of flavor.
Enjoy!: Pair your protein cream of potato soup with some crusty bread or a fresh salad to round out the meal. It’s now ready to enjoy – a perfect blend of comfort and nutrition.
Cream of Potato Protein Soup: Thickening and Thinning It Out
The ratio of instant potatoes to liquid in our recipe ensures a beautifully creamy, thick soup, but remember, everyone’s preference for soup consistency can vary.
- Instant Potatoes: They’re our thickening agents, and using them as directed results in a hearty texture.
- Liquid: Comprising broth and Greek yogurt, this balances the thickness from the potatoes and adds creaminess.
If the soup’s thickness isn’t to your liking:
- For a Thicker Soup: Simmer it longer or add more instant potatoes.
- For a Thinner Soup: Simply add more broth or water to reach your desired consistency.
Cooking is all about personalization. Start with lesser quantities and adjust as you go – it’s easier to thin a thick soup than to thicken a thin one.
Tips For Adding In The Greek Yogurt + More
Incorporating the Greek yogurt correctly is key to achieving that perfect creamy texture:
- Add Yogurt at the End: Wait until the soup is fully cooked and at a serving temperature.
- Temper the Yogurt: Mix a small amount of hot soup with the yogurt before adding it to the pot. This prevents curdling.
- Keep It on Warm: Use the ‘warm’ setting on your slow cooker to maintain the right temperature.
- Stir Occasionally: This keeps the texture consistent and creamy.
- Serve When Ready: Your soup will stay warm and inviting, perfect for any gathering.

Estimated Protein Content by Ingredient
Remember, this is a rough overview of how I calculated the protein by ingredient, if you change any of the ingredients for your cream of potato protein soup or use different brands (which I am not publishing brands, I am just sharing ingredients) your protein values will change.
- Nonfat Greek Yogurt (2 cups): Greek yogurt is a protein powerhouse, with about 10 grams of protein per 100 grams. Two cups (roughly 490 grams) contribute approximately 49 grams of protein.
- Sharp Cheddar Cheese (1 cup): Cheddar cheese averages 7 grams of protein per ounce. With 8 ounces in a cup, this adds up to about 56 grams of protein.
- Bacon Bits (½ cup): Real bacon bits contribute significantly too, with 3 grams of protein per slice. Half a cup, equivalent to about 8-10 slices, adds approximately 24-30 grams of protein.
Total Protein Calculation:
Summing up these components, our soup has between 129 and 135 grams of protein in total. Divided into 6 servings (about 12 oz each), this equates to:
