Summer is all about the freshest in fruits and vegetables. I love that! Anytime I grab pecks of peaches, I create this crazy good recipe. You won’t believe how easy it is to make delicious and easy peach mascarpone ladyfingers.
Don’t even think about using your oven because this is a NO BAKE recipe! Grab your mixer, a small pot, and use about 15 minutes of your time. The best things about being a travel and culinary writer are bringing home recipes that really created a memorable time!

I find that any recipe that I can quickly relate to a destination is one that is invaluable, it is a souvenir I bring back that takes up no luggage space!

Tips for Making this perfect!
There is nothing worse than finding a recipe on the internet that does not work! Trust me, I’ve used this recipe for years, it was one I discovered while in Italy! Repetition makes perfect.
First, I let my mascarpone come to room temperature so that it is easier to mix. Also, make sure that you whipping cream is cold right until you are ready to use it!
The riper your peaches are the better! For those of you traveling through South Carolina, Old 96 District, you are privy to the best summer peaches. Titan Farms provided my peaches for this recipe and I can’t say thank you enough!
Sweet, juicy, ripe peaches are the summer crop in South Carolina you don’t want to miss. As a matter of fact, no matter where you are Peaches in August are the fruit of the month, so make sure to stock up and try this recipe. After all, it is NO BAKE so you don’t have to crank that oven and heat the house!
While this is lick-the-screen worthy, and definitely provides the appropriate foodgasm for a dessert, don’t lick the screen. Instead, just prepare this with my simple recipe. It won’t take you long and rather than screen-licking you can be finger-licking!
I also encourage you to savor a bite of the dipped Ladyfingers, just to taste how delectable they are in the sauce you will be dipping in. Truly the sauce intensifies the taste!
Mascarpone Filling
2 C Heavy Whipping Cream
3/4 C Sugar
Mascarpone
2 Teaspoons Vanilla Flavoring
3 Teaspoons Almond Flavoring
Dip Sauce for Ladyfingers
Equal parts water and sugar (1/4)
2 Splashes of Blue Curacao liqueur
Peaches
3 Peaches, rinsed, then chopped (leave the skin on!)
LadyFingers
24 Ladyfingers (12 per layer)
2 Graham Cracker Squares, crushed by hand
Presentation
Caramel Sauce to drizzle in an ‘s’
Honey drizzled from top to bottom
Preparation Directions
First, prepare the Mascarpone cream sauce. Add sugar, vanilla and almond flavoring, mascarpone cheese and heavy whipping cream to a bowl. Or, you can (as I did), place this into a blender like the Ninja Processor!
Process all ingredients until smooth. Put into a snap-top container (or a pastry bag if yours is thicker!) and refrigerate for about 30 minutes to an hour! Just enough to get it all lightly congealed.
Next, in a small 1-Quart saucepan, add your water and sugar. Allow the sugar to dissolve, and as soon as it comes to a boil, remove. Once cooled (about 10 minutes) add in the 2 splashes of Blue Curacao Liqueur.
Then, pour this into a flat dish. You will eventually be dredging the Ladyfingers through this so make sure the Ladyfingers can fit side to side with ease.
Chop your peaches and place them in a bowl, you will be using them in just minutes. Make sure to divide the peaches into 2 sections. The first section should have about 3/4 of the bowl contents, while the other part should be the remaining 1/4. You will be using one part of these on one layer and the rest on the top!
Putting It All Together
Dredge each cookie quickly through the dip sauce and place onto a rectangular tray. Repeat this sequence, until you have dredged 12 Ladyfingers through the dipping mix.
It is easy and you can do them all at once and just keep the second set of 12 sitting on a separate tray until you are ready to use them.
If there is any of the mixture left (blue), simply drizzle it across the Ladyfingers once they are on the tray, they will absorb the remainder. Do not throw it out that would be the wrong choice, use all of it!
Chances are there will be nothing left, as I kept this recipe trim to the amounts needed! Now, make sure the Ladyfingers are close together, then add peaches. Remove the Mascarpone filling from the refrigerator.
You can use a ladle to coat the fruit in a drizzling motion. Stagger the motion in order to really cover without gobbing, each Ladyfinger side to side, not up and down!
Alternatively, you can use a measuring cup because it has a nice spout on it which will help you pour evenly atop the dessert. (all your preference). Since you have seen this above, you know that you are about to add the graham crackers and the honey drizzle as well as more cream! Read on and let’s get this fabulous peach Mascarpone Ladyfinger dessert completed!
Looking Good, Keep Building!
To get a better idea of what these steps look like all together, have a look at this picture. You will now be adding crumbled graham crackers and honey in addition to what we just did above!
Graham Crackers & Honey
Next, place a graham cracker square in your hand, and crumble it, then spatter across the top of the newly poured cream mixture. Make sure to go from end to end. Use up to 2 graham crackers depending on how much graham taste you want.
Now, it’s time for the honey, just drizzle it across in an ‘s’ formation from top to bottom. Building layer 2 is so easy because you have already done the first layer and the second is the last. Fast and easy right? Just like I promised.
2nd Layer – Just Repeat Ladyfinger Preparation but….
Again, repeat the Ladyfinger dunking procedure (unless you did it all at once, then all you have to do is stack) and stack atop the already placed peaches. Be precise in placement, keeping Ladyfingers together more than apart.
Use all 12 Ladyfingers. (12 top and 12 bottoms). Your next step is different from the first step because Italian Food is all about presentation!
Top with remaining Mascarpone Cream. We still are not done building this no-bake peach masterpiece. Just a few more steps and you can start shoveling it into your mouth.
Right now we have to finish adding peaches, caramel, and honey! Are you licking your fingers are you go along? Well, we all know that it happens, so go ahead, just no double-dipping, please!
Add the cream atop the second layer, first, rather than after the peaches. It’s the finale so we want the peaches exposed and teasing everyone about to bite into the dessert! Add on the final 1/4 batch that is in reserve in your mixing bowl.
Don’t toss them down, make sure that each Ladyfinger gets a few from side-t0-side. You want to ensure that each bite has a bit of fresh fruit in it as well as that yummy Mascarpone cream!
I realize you might think it is already delectable and finished, but these last 2 steps are the difference between good and Magnificent! Most of us want a MAGNIFICENT ending to our meal, so go with it! Indulge!
Also, the last 2 steps are so easy and take about 30 seconds total, but truly make a difference in the overall taste as well as a presentation! What looks good, always tastes even better right?
Both Honey & Caramel Seals The Deal
Last, top with drizzles of honey from top to bottom. Do the same with your squeeze caramel sauce, using a light hand, just enough to taste! The honey will mesh with the Mascarpone Cream as it sits and that is fine.
Truly the honey just adds more flavor to the already delicious Mascarpone Cream without taking anything away from it! No overpowering tastes!
If you are not a Caramel person, eliminate it, and perhaps use chocolate? I did not like the Chocolate against this dish as it was overpowering and more appropriate for a Strawberry Mascarpone dessert! Simply preference, do what makes you happy!
The Art of Serving: A tip and time to TASTE!
The first piece is always the tell-tale section that either makes or breaks your minute. Always give it to the person in the group who loves you the most. Even if they hate it, in front of a group, they will always make you shine! Then, serve everyone else (just saying..)
It’s time for the best part to come, tasting your creation! Use a serving spoon or spatula, divide from the top by sections of 2 or 4 depending on the portion desired by your, or your guests and family! There is no cutting and I can pretty much guarantee there will be no leftovers (unless it is just 2 people!).
