It’s important to realize that some of the work can be done ahead of time so that you can just toss it all together.

Mix 1/4 C of Rice Vinegar, with a few teaspoons of Extra Virgin Olive Oil.
Next, add stevia (just a pinch), mix, and then a 1/2 teaspoon of dijon mustard.

- For the Salad
- 1-2 Cof Buttercrunch lettuce red and green for color appeal
- 1 C of Arugula
- 2 Pickling cucumbers peeled, chopped.
- 1/4 C of an oversized carrot peeled, sliced, chopped.
- 3 Tablespoon Green Onion tops. Rinsed and chopped.
- 9-10 Cooked deveined, peeled, shrimp. Defrosted and chopped.
- 4-5 Tablespoons of Feta Cheese.
- For the Rice Vinaigrette Dressing
- 1/4 C of Mizkan Rice Vinegar
- 3 teaspoons of Extra Virgin Olive Oil.
- A Pinch of stevia
- 1/2 teaspoon of dijon mustard optional but amazing!
