Every day should be a lasagne kind of day. Thick, ooey, gooey scrumptious layers of sauce, noodles, cheese, and flavor. Back in the day, Sundays used to be the day for lasagne because it was so labor-intensive and needed to cook for a long time and then set to get it just right.
Today, our lives are fast-paced, and we need dinners on demand. The Instant Pot Broken Lasagna with Cheese Tomato Sauce is a classic in my house and makes a bi-monthly appearance. I mean, it is rich and delicious and we do watch our waistlines, lol!
Get ready for fast, easy and delicious one-pot lasagna. My guess is you will never make lasagne the old-fashioned way because the pressure cooker cuts the cooking time down to about 25 minutes! Lavishly live food out loud with my recipe for Instant Pot Broken Lasagne with cheese tomato sauce.
Instant Pot Broken Lasagna With Cheese Tomato Sauce
First things first, you need an Instant Pot and if you have not purchased one yet, you will love the Instant Pot,(affiliate) no matter which size you choose. Once you have this cooking appliance in your kitchen you can pretty much become a superstar without any other pots and pans! ( I have not touched my other cookware since I discovered these a few years back, plain an simple!)
This Is Not
My recipe today is NOT soup. You do need to add enough liquid to help the lasagne noodles cook, but not too much as to make it runny. Additionally, note that at the end of cooking, remove the inner sleeve of the pot to a cooling zone. You will be adding in other ingredients that do not need to be cooked. All the additional ingredients will need is the heat of the piping hot mix in the sleeve.
You can use any brands of noodles, sauce, and broth that you want. Get creative. You could even brown meat. The recipe I prepared today was meatless so I could taste it and make sure it was all good ( I do not consume meat!).
This is not a recipe that takes a lot of spices, I believe in the motto ‘less is better’ and let flavor prevail! Please be prepared for an easy to recreate meal.
Let’s Get Cooking!
Italian Seasoned Bread Crumbs 1/2 C + 1/2 C- 1 C (optional)
Parmesan Cheese 1/2 + 1/2 C
Shredded Mozzarella Cheese 1 C
Olive Oil 4 Tbsp
Basil 4 Large Leaves then cut into pieces.
Minced Garlic 3 Tbsp
Ricotta Cheese (15 oz)
Carton of Vegetable Broth (32 oz)
Paste 12 Ounce Can + 2 Cans of water to rinse
Sauce 2 Cups (can be jarred sauce or homemade, mine was homemade)
Lasagne Noodles (about 11) broken into pieces
Yellow Onion -1/2 c chopped
Use Saute button. Add the olive oil, garlic, and onion to soften (Translucent). Stir as needed.
Next add in tomato paste, mixing thoroughly and allow to saute slightly.
As it begins to saute mix in 2 cans of water and allow that again simmer/saute, but not splash (then it has cooked too much).
It’s time for the sauce.
and the basil, make sure you ripped it.
Now Ricotta, and mix it in well with the whisk, and then the vegetable broth. Stir well.
Use the full 32 ounces) the noodles absorb water, no worries.
Next, it’s time to add in Parmesan cheese and my famed secret ingredient.
Do you know what is in the red measuring cup? If you guess Italian flavored breadcrumbs you are right!
Place the lid on, turn off of Saute and seal the vent. Program on Soup for 13 minutes.
When the pressure cooker is done, allow to cool for 2 minutes naturally, then loosely place a moist towel over the valve and let it open to release pressure.
Here’s where things get busy. See this is what you will see when you open the lid, but the cooking journey is not done.
Remove the sleeve from the Instant Pot (use hot mitts please) and then add in the additional Parmesan, additional breadcrumb, and the mozzarella.
While this is bubbling from cooking, sprinkle the breadcrumb along the top, this is going to add taste and absorb water so that the lasagna can thicken. Then, do the same with the Parmesan cheese, and mix it all in well. Push from the top and the stir.
Move the mixture throughout the broken lasagna noodles and through the sauce that just cooked. Finally, add in the mozzarella. I do this last so the bottom of the Instant Pot sleeve is not too messy, lol from melted cheese. It will be amazing and gooey!
Last, get those plates ready, and set the table. Make a salad, pour a glass of wine. Ok, so it has now set (it literally takes a few minutes for the breadcrumbs to go to work!

Saute – about 10 minutes, the thinner you slice the onion the faster it will cook. Pressure build to finish product (remember pressure cooker was already warm from Saute) so about 5 minutes and then cooking time of 13. Total time investment under 30 minutes.
