You might first want to know what in the world a cornichon is? Cornichons are almost like tiny gherkin pickles, but they taste a whole lot better. I found mine in Trader Joe’s where I spend a lot of time food shopping. I don’t rinse the salt off of the cornichons because when you are on Low Carb High Fat diets you often need to replenish sodium that you may not be otherwise getting, so I don’t rinse to get the brine off and it does not matter if you would.
Another thing you might want to know is why I use pickling cukes rather than the traditional English Seedless Cucumber. I personally feel like I am gambling in Vegas every-time I buy a English Cuke, I never know if it is in fact going to be seedless or if I am going to core out the seeds. I buy the picking cucs, long, thin and hard so I know they will be tasty when peeled and placed in a salad.
Low Carb Salmon Salad With Cornichons
Ingredients
- 1 5 oz can Boneless Skinless Pink Salmon
- 2-4 Cornichons
- 1 Medium Pickling cucumber
- 1 Cup of Shredded Romaine Optional
- 1 TBSP EVOO
- Dash of Freshly Milled Pepper
- 1 Medium Avocado
- 1 Dash of Hot Sauce Optional
Instructions
- Open and Drain Salmon, and then place in bowl and separate all with a fork.
- Chop the Cornichon and add in to the salmon, do not rinse.
- Peel and Chop Pickling Cucumber and place into other ingredients
- Peel, Chop and add avocado in
- Spritz all with Freshly Milled Pepper
- Place One handful of Romaine if selected as an option to a plate
- Scoop This salad onto the Romaine
- If you like a little flavor, add on the Hot Sauce, and enjoy
The avocado should be ripe, but not mushy as that totally ruins the appeal of this dish because the salmon is already a soft texture. You do want to be mindful to blends and if you are not adding in romaine for crunch, you will be out of luck with differential tasting blends in your mouth.

The hot sauce adds a little heat to things and I like this as it keeps the taste interesting in lieu of salad dressings and goopy things like Mayo(which I can’t have).
