While you see the word bacon in the recipe, don’t second guess it, because you can eliminate the bacon for anyone in the mix that does not eat meat. INGREDIENTS
5 Strips of bacon (use pre-cooked) microwave and chopped
1 5.2 z Boursin Cheese (chive & onion) Optional (cream cheese instead)
1 ½ C Mexi-cheese mix
1 tsp Mediterranean Salt
¼ C Water
1 tsp Pepper
¼ Chives
8 C Red Potatoes (cleaned, cubed)
2 Tbsp. Canola Oil
METHOD
Slice Boursin Cheese into 8 cubes so that it will mix in easily. I do this to cut the cooking time down and to make it easier to melt. Really you don’t have to, but I do this in most recipes. The smaller parts allow the process to happen faster, and I am all about fast! (set this aside)
It’s time to prep the pressure cooker liner. Turn Pressure Cooker to Sauté mode. Add oil, and potatoes salt, pepper and stir. The process will allow the potatoes to cook a bit, and then you will mix things up. So, allow mixture to lightly cook potatoes, about 7 minutes’ total, mixing regularly.
Next, add in Boursin Cheese cubes and the Cheddar/Mexi Cheese mix. Now add in the bacon, mix really well and turn off Sauté. So far so easy right? Trust me, it’s not getting any harder from this point. In fact you will be able to do something else in just a few seconds (like shove all stuff laying around in closets, lol!)
Put lid on pressure cooker, lock and choose Rice Setting. Program to 16 minutes. Once cooking cycle ends, allow pressure to naturally release. Do note that if you choose to immediately release pressure, cover the gauge so nothing ‘spits’ and release pressure.
The final touch happens just when it is time to serve the yummy potatoes. Garnish with fresh cut chives & plate, serving warm.
