Shrimp and Roasted Red Peppers with Shaved Parmesan
TIPS & TRICKS BEFORE YOU BEGIN
It is important to realize that this recipe uses cooked shrimp, making it so much easier and faster. If you prefer, you can grill your shrimp, but you will need to alter the time preparation as this is meant to be fast and easy.
In the event that you are looking for a different cheese, try tossing with a Gorgonzola or a Feta, depending if you want pungent or milder.
Additionally, if you prefer to sub out the Brown Rice or Basmati Rice with an alternative starch you can use Quinoa if you are really wanting to keep this on the low-glycemic end of the spectrum or you conversely, you can dish out pastina. Any of the starches offer a nice contrast to the salad.
INGREDIENTS
1 c of cooked shrimp, tail off and cut into pieces
1/2 C of Celery, deveined, peeled and cut into small pieces.
1/2 C of Jarred Roasted Red Peppers, drained, and cut into bite-size pieces
1/2 C of Cooked Brown Rice/Basmati Rice (your choice or a mix)
4 Tbsp Of Shaved Parmesan
METHOD
Place celery and roasted red pepper in a mixing container.
Mix together, the juice from the drained roasted red pepper will actually take over the seasoning on this.
Add the shrimp. Stir.
Mix together well and then top with parmesan.
Dish out a scoop of rice and then top with shrimp, roasted red peppers and celery mixture.
Top off with a bit more shaved parmesan and serve.

Pairing This Up
I would highly suggest a chilled dry white wine if you are looking to pair this meal up with a beverage. In addition, a Pear Margarita slides down well.
