Indulging in delectable salads is somewhat of a passion for my lifestyle. Each time I see a leafy green I seem to dream up a different way to use that green. Abiding by my LCHF lifestyle I am getting more and more creative, however, since I am already a strict vegetarian I have to say that I have dabbled with Arugula in so many different ways. Some of my favorite mix-ins are other veggies that let me create a colorful dish, while adding flavor and texture to what is about to be consumed. This is my story of lavishly living food out loud with the preparation of an Arugula Roasted Red Pepper Salad.
A while back, using one of my moms favorite greens, Arugula, I decided to test run a different kind of salad, which would include Arugula and roasted red peppers. However, as I started creating, I kept saying to myself, “you can do better than just a party of two paired veggies, intensify it!” My decision was to create a phenomenal Arugula Roasted Red Pepper Salad that offered a few other mix-ins that added to the taste and could be stacked on bread(if not on LCHF), mixed in with seafood or eaten as is. The birth of the Arugula Roasted Red Pepper Salad happened.
Arugula Roasted Red Pepper Salad
Arugula Roasted Red Pepper Salad
Ingredients
- 1 Roma Tomato
- 2 C Arugula
- 1/4 C Roasted Red Peppers
- 3 Tbsp Feta Cheese
- Dash of S & P
- 3 Tbsp of EVOO
- 1 Tbsp of Red Wine Vinegar
Instructions
- I buy my arugula already washed, so then I cut the Arugula into bite size pieces.
- Chop up the Roasted Red Peppers into bite size pieces
- Add the Feta
- Add the S&P
- Add the Vinegar
- Add the Oil
- Chop up the Tomato
- Serve
This is perfect if you are on a LCHF diet, unless of course you are avoiding tomatoes at all costs. Everyone is one a different version/lifestyle of the LCHF so, please note this does have tomato in it. I love the coolness of the tomato against the texture of the arugula and the flavor pair up is sensational.
You Will Need
The best way to describe this creation is easy! The most important thing about the ingredients is that the Arugula is dry, and clean, soggy Arugula will make for a BAD tasting salad. Light and crisp is how this salad should be, and the leaves should be small, tender and cut into bit size pieces. The Roasted Red Peppers do not need to be rinsed, and they can be jarred,homemade, marinated or plain. If you buy marinated roasted red peppers you may not want to add dressing and rather let the juice from the pepper roll into the salad as the flavoring instead.

Take your Arugula and chop into bite size pieces, sometimes it is small enough that you don’t need to cut it. Add your chopped tomato, and your roasted red peppers. Add your Feta Cheese, Salt, Pepper and stir. You will only yield One serving with the recipe I have provided, so feel free to double it, if you are sharing or using it as a main meal option.
If you are not following a LCHF lifestyle, then you might choose to serve this atop bread, on pasta, with a side dish with Quinoa, etc. A great mix-in with this is crab meat or small grilled shrimp, it makes it even more delicious.
