The holidays sure do cause a stir, a whip, a casserole and a bunch of ruckus in the kitchen and Frieda’s Specialty Produce kicks it up the delicious tastes a notch beyond your basic produce. I am a vegetarian girl and I love trying new veggies or differentiation of common veggies like potatoes that are different from the norm such as Fingerling and I love shallots. As you can imagine without eating meat, I have to get a little creative in order to fill my belly, and I do with Frieda’s Produce. There are so many great produce items out there, and I have been working on creating fabu meals with these products. Man does not live on meat and potatoes alone!
Did someone say potatoes? What a coincidence. Fingerling Potatoes are so easy to th, prepare and eat that you might find yourself carb loading more than you intended! Don’t peel this little delights, just cook and serve. I fork pierce each of my potatoes, toss them in some olive oil and sea salt and microwave and the end result is a delicious sweet flavor. There are many different colors of Fingerling Potatoes and they come in different textures and flavors that include: Russian Banana, French and Ruby Crescent.
I love working with shallots they are sweet tasting and bring out the best in arborio rice. Here are the shallots I used from Frieda’s Specialty produce to create a heavenly platter of rice and mushroom parmesan.
I cooked rice, lightly sauteed the shallots and then mushrooms and that is about it! Don’t forget the cheese. The Shallots from Frieda’s are perfection so the recipe turns out perfect every time!
