The Holiday has gone and left you with a refrigerator filled with leftovers, no worries, because I have a great recipe to share with you that is Frugal, delicious and will surely use up those leftovers!
Real Easy Ham Casserole
Preheat oven to 350 F
Pam a glass 8×8 baking dish
Cut a piece of foil to cover baking dish
INGREDIENTS YOU WILL NEED
1 Can of Cream of Mushroom Soup ( no matter the brand)
water – (you will use the soup can for the water, which rinses all the extra soup out and gives you a perfect measurement for moisture)
3 tbsp margarine
2 cups of Ham, Diced, Chopped, small little pieces ( I used a food processor)
1 C of Peas, frozen, or fresh (whatever you have)
1/2 c of plain bread crumbs
2 1/2 cups of small pasta cooked(al dente) – I used ditalini but you can use elbows or mini penne
HOW TO :
In a mixing bowl combine ham, soup, water, noodles, breadcrumbs, margarine chunks and peas. Mix well until it is all coated with the soup mixture. Scoop it into the baking dish and bake for about 35 minutes or until golden brown and bubbly ( I keep the foil on until the last 5 minutes) — use caution when taking out as this will be bubbling and Steam may be released! Always use pot holders!
