Air-Fried Mexican Fried Ice Cream
Air-Fried Mexican Fried Ice Cream is more than just a dessert—a playful delight that takes your taste buds on a wild and exciting ride. The combination of the crispy cinnamon coating, velvety ice cream, and delightful toppings creates an explosion of rich textures that always will be a favorite!
Ingredients
- 1 Qt Trader Joe's Vanilla Ice Cream
- 1/2 C of (white cake mix)
- Cinnamon 2 Tbsp
- 1 Box of 6 C crushed Cinnamon Toast Crunch
- Chocolate Syrup
- Whipped Cream
- Caramel Sauce
- Cherries
Instructions
- Directions: Line a cupcake pan with liners, or use a plastic portioned container and scoop out medium scoops of ice cream, making a ball if it does not form when scooped (I used a large cookie dough scoop)
- Once you've scooped out 10 even scoops of ice cream into the muffin tins, cover and freeze for one hour
- Remove from the freezer and roll each of the scoops of ice cream into the cake batter, evenly coating, then replace each to the container and freeze again.
- While the ice cream is solidifying, crush the Cinnamon Toast Crunch for another hour, either with a rolling pin in a plastic bag or with a potato masher.
- Leave some pieces larger for fun textures.
- Then add in a generous heap of cinnamon, more if you like it, less if you don't
- When you are done, set it aside.
- At this point, remove the ice cream balls again, and roll the balls into the cereal and cinnamon mixture, making sure to push the coating all over the ice cream, leaving no part exposed.
- Repeat for all ice cream balls, then return to the freezer for about 4 hours or overnight.
- When you are ready to serve, preheat the air fryer to 400 degrees, place a foil liner into the Air Fryer, and place as many of the balls as you can fit (we easily fit 5 in ours), but the size of your air fryer dictates this.
- Fry them for 2 minutes, NOT LONGER, and remove them from the air fryer.
- Place each one in a bowl, top with caramel, chocolate syrup, whipping cream, and a cherry (all optional) and enjoy.
